- Softened Butter
- Brown Sugar
- White Sugar
- Canned Pure Pumpkin
- Egg
- Vanilla
- Gluten-Free Flour
- Cinnamon
- Pumpkin Spice
- Oat Flour

- Baking Soda
- Walnuts
- Milk or Dark Chocolate Chips

- Preheat oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- In a mixing bowl add the butter, sugars and beat.
- Add the pumpkin, egg and vanilla and beat again.
- Whisk the dry ingredients together in a small bowl.
- Add dry to wet ingredients and mix on medium until well combined.
- Add the walnuts and chocolate chips.
- Use an ice cream scoop to drop cookie batter onto lined cookie sheet.
- Bake in oven for 10 minutes.
- Remove and cool.

- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup canned pure pumpkin
- 1 large egg
- 1 tsp vanilla
- 1 3/4 cup gluten free flour blend
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 1/2 tsp salt
- 1/2 cup gluten-free rolled oats
- 1/4 cup Gluten-free oat flour
- 1 tsp baking soda
- 1/4 cup Raw chopped walnuts
- 1/3 cup Milk or dark chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- In a mixing bowl add the softened butter and sugars and beat until light and fluffy.
- Add the canned pumpkin, egg and vanilla and mix again.
- In a medium bowl whisk the gluten free flour blend, spices, salt, oats, oat flour and baking soda.
- Add dry ingredients to mixing bowl and beat on low-medium speed.
- Add the walnuts and chocolate chips and mix on low.
- Use an ice cream scoop to drop cookie batter on the lined cookie sheet.
- Bake in oven for 10 minutes.
- Remove from the oven.
