Gluten Free Pumpkin Chocolate Chip Cookies

- 3/4 cup softened butter
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup canned pure pumpkin
- 1 large egg
- 1 tsp vanilla
- 1 3/4 cup gluten free flour blend
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 1/2 tsp salt
- 1/2 cup gluten-free rolled oats
- 1/4 cup Gluten-free oat flour
- 1 tsp baking soda
- 1/4 cup Raw chopped walnuts
- 1/3 cup Milk or dark chocolate chips
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.
In a mixing bowl add the softened butter and sugars and beat until light and fluffy.
Add the canned pumpkin, egg and vanilla and mix again.
In a medium bowl whisk the gluten free flour blend, spices, salt, oats, oat flour and baking soda.
Add dry ingredients to mixing bowl and beat on low-medium speed.
Add the walnuts and chocolate chips and mix on low.
Use an ice cream scoop to drop cookie batter on the lined cookie sheet.
Bake in oven for 10 minutes.
Remove from the oven.
