Gluten Free Pumpkin Chocolate Chip Cookies

A soft gluten-free cookie filled with pure pumpkin, warm spices, chocolate chips and perfect for fall season. An easy to make gluten-free pumpkin cookie made with simple ingredients.

Equipment

  • 1 measuring cups and spoons
  • 1 mixing bowl
  • 1 hand mixer
  • 1 parchment paper
  • 2 cookie sheets
  • 1 ice cream scoop

Ingredients
  

  • 3/4 cup softened butter
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup canned pure pumpkin
  • 1 large egg
  • 1 tsp vanilla
  • 1 3/4 cup gluten free flour blend
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/2 tsp salt
  • 1/2 cup gluten-free rolled oats
  • 1/4 cup Gluten-free oat flour
  • 1 tsp baking soda
  • 1/4 cup Raw chopped walnuts
  • 1/3 cup Milk or dark chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.
  • In a mixing bowl add the softened butter and sugars and beat until light and fluffy.
  • Add the canned pumpkin, egg and vanilla and mix again.
  • In a medium bowl whisk the gluten free flour blend, spices, salt, oats, oat flour and baking soda.
  • Add dry ingredients to mixing bowl and beat on low-medium speed.
  • Add the walnuts and chocolate chips and mix on low.
  • Use an ice cream scoop to drop cookie batter on the lined cookie sheet.
  • Bake in oven for 10 minutes.
  • Remove from the oven.
