Made with butter, chocolate chips, eggs, sugar, vanilla, cocoa powder, gluten-free flour blend and baking powder. Simply mix the dough, let it chill for an hour and then use an ice cream scoop to drop batter onto a cookie sheet. Bake, cool and then fill with the creamy icing.

HOW TO MAKE THE COOKIES:

  1. Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper.
  2. In a small saucepan add the butter and chocolate chip and melt on low.
  3. In a mixing bowl add eggs and sugar and beat well with a hand mixer.
  4. Add vanilla and beat again.
  5. Add cocoa, baking powder and flour and mix on low speed until combined.
  6. Slowly add the melted chocolate and mix on low until combined well.
  7. Put batter in a bowl and refrigerate for an hour.
  8. Use a small ice cream scoop to drop dough onto lined cookie sheet.
  9. Bake for 12 minutes.
  10. Remove and cool.
  11. Add frosting ingredients to a small bowl and beat well with a hand mixer until smooth and creamy.
  12. Divide cookies in 2. Add a small amount of frosting on one cookie and top with another. Repeat.

Frosting

  • 1/2 Cup butter, softened
  • 1 2/3 Cup Icing sugar
  • 1/2 tsp vanilla
  • 1 Tbsp milk
