Gluten-Free Oreo Cookies

Frosting
- 1/2 Cup butter, softened
- 1 2/3 Cup Icing sugar
- 1/2 tsp vanilla
- 1 Tbsp milk
Preheat oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
In a small saucepan add the butter and chocolate chips and melt on low. Stir
In a mixing bowl add the eggs and sugar and beat well with a hand mixer.
Add vanilla and beat again.
Add the cocoa powder, baking powder and flour and mix on low speed until combined well.
Slowly add the melted chocolate and mix on low/medium speed until combined completely.
Put dough in a small bowl and refrigerate for an hour.
Use a small ice cream scoop to drop dough onto lined cookie sheet.
Bake for 12 minutes.
Remove and cool.
Divide cookies into 2. Add a small amount of frosting onto a cookie and top with another.
