Gluten-Free Oreo Cookies

Homemade gluen-free Oreo cookies are easy to make, delcious, chocolate cookies sandwiched between a creamy vanilla frosting. A nostalgic treat that you can make at home and perfect anytime of the year.

Ingredients
  

Frosting

  • 1/2 Cup butter, softened
  • 1 2/3 Cup Icing sugar
  • 1/2 tsp vanilla
  • 1 Tbsp milk

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a small saucepan add the butter and chocolate chips and melt on low. Stir
  • In a mixing bowl add the eggs and sugar and beat well with a hand mixer.
  • Add vanilla and beat again.
  • Add the cocoa powder, baking powder and flour and mix on low speed until combined well.
  • Slowly add the melted chocolate and mix on low/medium speed until combined completely.
  • Put dough in a small bowl and refrigerate for an hour.
  • Use a small ice cream scoop to drop dough onto lined cookie sheet.
  • Bake for 12 minutes.
  • Remove and cool.
  • Divide cookies into 2. Add a small amount of frosting onto a cookie and top with another.

Frosting

  • Add frosting ingredients to a small bowl and beat with a hand mixer until creamy and smooth.
