A delicious, slightly sweet, gluten-free and protein packed treat that tastes just like a snickerdoodle cookie. Dip in white candy melts and add sprinkles and you have a festive, fun and healthish gluten-free treat for the holidays.
These easy to make, no-bake gluten-free snickerdoodle protein balls are made with cashew butter, almond flour, coconut oil, cinnamon and vanilla protein powder. We all want sweet teats during the holidays, so I created a healthier protein ball dipped in candy melts for you to enjoy.
INGREDIENTS NEEDED:
- Almond Flour
- Vanilla Protein Powder
- Cashew Butter
- Vanilla
- Cinnamon
- Coconut Oil
- Honey
- Coconut Sugar
To make the gluten-free protein balls you add all the ingredients into a food processor and process until it is combined. Use a small ice cream scoop to drop balls onto a small cookie sheet. Roll each ball with your hands and refrigerate for 20-30 minutes. Roll each ball in coconut sugar and cinnamon or melt white candy melts and dip each ball in it. Sprinkle white or Christmas sprinkles over each one and place back in the fridge for 30 minutes. Store in the fridge and enjoy!

- In a food processor add all the ingredients except the coconut sugar and process until it all combines. It should stick together nicely.
- Use a small ice cream scoop to drop balls onto a small cookie sheet. Use your hands to form each one into a ball and refrigerate for 20-30 minutes.
- Remove and roll in a coconut sugar and cinnamon or melt white candy melts and dip each ball in and then sprinkle holiday sprinkles on top.
- Place back in the refrigerator for 30 minutes.

- 1 Glass bowl for melting candy melts
Ingredients
- 3/4 cup Cashew butter
- 1/2 Cup Vanilla protein powder
- 1 1/2 cups almond flour
- 1/2 Tbsp cinnamon
- 1/2 cup Liquid honey
- 1/4 Cup coconut oil (not melted)
- Coconut sugar
Instructions
- In the bowl of a food processor add all the ingredients except the coconut sugar. Process until combined. Mixture should stick together.
- Use a small ice cream scoop to drop dough onto a small cookie sheet. Use your hands to form each one into a ball.
- Refrigerate for 20-30 minutes.
- Roll each ball in coconut sugar and cinnamon or melt white candy melts in the microwave and dip each protein ball in it. Sprinkle each ball with Christmas sprinkles.
- Refrigerate for 30 minutes.
- Store in the refrigerator in a ziplock bag or container.
