Traditional linzer cookies are rich, buttery cookies filled with fruit preserves and topped with another cookie then sprinkled with icing sugar. These gluten-free cookies deserve a starring role on your cookie platter this Christmas.
INGREDIENTS NEEDED:
- Shortening
- Butter
- Plain Greek Yogurt
- Vanilla
- Swerve Brown and Granular Sweetener
- Egg
- Gluten-Free Flour Blend
- Cornstarch
- Baking Powder
- Low Sugar Jam
A perfect Christmas treat are these gluten-free linzer cookies. Made with shortening, butter, plain greek yogurt, Swerve brown sweetener and granular sweetener, egg, gluten-free flour blend and cornstarch. They are easy to make and are a kid friendly recipe too.
I like to cut back a bit of the sugar I use in holiday cookie recipes when I can. I used Swerve brown and granular sweetener and no sugar jam in these cookies. No one will notice any change in taste, and I like that I have reduced the sugar in the cookies by a wee bit.

Holiday gluten-free cookies that are easy to make, delicious and almost too pretty to eat. Perfect for the holiday season to enjoy with friends and family or to add to a cookie box as a food gift. They are much easier to make than they look. After mixing the dough together you let it chill in the refrigerator for 30 minutes. You the roll out the dough and use a circle cookie cutter on the rolled dough. On every other circle you use a much smaller circle cookie cutter in the middle of the circle. Bake and once cooled you will spread jam on one cookie and top with another.
HOW TO MAKE THE COOKIES:
- In a stand mixer add the shortening and butter and mix well.
- Add the yogurt and vanilla and beat until creamy.
- Add the sweeteners and beat again.
- Add the egg and beat until batter is light and fluffy.
- Add the dry ingredients and mix on low speed until all blended.
- Remove dough and form into a ball, wrap in plastic and place in refrigerator for 30 minutes.
- Remove dough and preheat oven to 350 degrees.
- Divide dough in 1/2 and line cookie sheets with parchment paper.
- Place a parchment paper on counter and roll the dough out. Using tapioca starch to sprinkle over dough to prevent sticking.
- Use a circle cookie cutter and cut circles into the rolled dough. Use a small cookie cutter to make a small circles in 1/2 the cookies. Place on cookie sheets and bake for 8 minutes.
- Repeat with other 1/2 of dough.
- Once cooled you can spread jam on once cookie and then top with the cutout cookie. Sprinkle icing sugar over all the cookies.

Gluten-Free Linzer Cookies

Ingredients
- 1/2 cup palm/coconut shortening
- 1/4 cup butter, softened
- 1/4 cup Plain greek yogurt
- 1 tsp vanilla
- 1/3 cup Swerve granular sweetener
- 1/3 cup Swerve brown sweetener
- 1 large egg
- 2 cups gluten free flour blend
- 1/2 cup gluten free cornstarch
- 1 tsp gluten free baking powder
- Low sugar jam
Instructions
- Line 2 cookie sheets with parchment paper or silpats.
- In a stand mixer add the shortening and butter and mix well.
- Add the sour cream and vanilla and mix until creamy.
- Add the sweeteners and beat well.
- Add the egg and beat until batter is light and fluffy.
- Add the dry ingredients and mix on low speed until all mixed well.
- Remove batter and make into a ball.
- Place in refer for at least 30 min to chill.
- Preheat oven to 350 degrees.
- Remove dough and cut in 1/2.
- Roll dough onto a floured surface.
- I like to use tapioca starch for this.
- Use a cookie cutter to cut out shape.
- Use a small circle cutter to cut hole in middle of one cookie.
- Place on lined cookie sheet and bake for 8 minutes.
- Remove and repeat process.
- Once cookies are cooled you can spread jam on one cookie and top with the cut out cookie.
- Sprinkle icing sugar on cookies.
- Enjoy!
