These gluten-free date cakes are a classic holiday cake recipe. Instead of baking in a large baking pan I like to make mine in ramekins. It offered everyone an individual portion of this moist and flavourful gluten-free date cake. Top with old fashioned caramel sauce and whipped cream and you have a wonderful holiday dessert.

INGREDIENTS NEEDED FOR THE DATE CAKES:
- Pitted Dates
- Baking Soda
- Butter
- Brown Sugar
- Gluten-Free Flour Blend
- Baking Powder
- Cinnamon
- Cardamon
- Ground Cloves
- Eggs
These gluten-free date cakes have ingredients like pitted dates, butter, brown sugar, gluten-free flour blend and spices like cinnamon, cloves and cardamon. Such a lovely Christmas spice cake-it fills your kitchen with the best holiday fragrance-baking!
Date cake is made with cooking pitted dates with water and then adding baking soda to them. Adding mixture to the rest of the ingredients. It is so moist and everyone will love this holiday dessert.
What is not to love about individual gluten-free cakes that are made with dates and are so moist, fragrant and oh so easy to make. Incredibly moist vintage gluten-free date cakes that are just like the ones my Grandma used to make. Made with gluten-free flour, spices, butter, brown sugar and pitted dates.
HOW TO MAKE THE DATE CAKES:
- Preheat oven to 350 degrees.
- Grease 6-8 ramekins very well.
- Place ramekins on a cookie sheet.
- In a small saucepan add the water and dates and bring to a boil. Turn to low and simmer for 5 minutes.
- Remove saucepan and add the baking soda. Stir well.
- Let stand for 10 minutes.
- In a medium bowl add the softened dates, butter, brown sugar and beat well.
- Add eggs and beat well.
- Add the gluten-free flour, baking powder and spices and mix on low speed until combined well.
- Pour into ramekins and bake for 28-32 minutes. (depending on size of ramekins you used)
- Remove from oven.
- Make caramel sauce and pour over date cakes.
These gluten-free date cakes make a regular appearance each and every Christmas dinner. I cannot imagine a holiday without these date cakes. Topped with old fashioned caramel sauce and whipped cream. Really not sure there is anything better. It invokes memories of time spent with my Grandma in her kitchen. She definitely instilled with me her love of baking for your family.

Gluten Free Date Cakes
Equipment
- 6-8 ramekin dishes
Ingredients
- 1 1/3 cup water
- 1 1/3 cup chopped pitted dates
- 1 tsp baking soda
- 1/3 cup softened butter (or Earth Balance Baking Sticks(non-dairy))
- 3/4 cup brown sugar
- 1 cup gluten-free flour blend
- 2 tsp gluten-free baking powder
- 1 tsp ground cinnamon
- 1/4 tsp cardamon and cloves
- 2 large eggs
Instructions
- Preheat oven to 350 degrees.
- Grease ramekins well.
- Place ramekins on a cookie sheet.
- In small saucepan bring water and dates to a boil and stir.
- Remove from heat.
- Add baking soda and stir.
- Let stand for 10 minutes.
- Pour softened dates into a medium bowl.
- Add softened butter and beat well.
- Add brown sugar and eggs and beat well.
- Add rest of the ingredients and beat on low until combined.
- Pour date batter into each ramekin about 2/3 full.
- Bake in oven for 28-32 minutes depending on the size of ramekins you use.
- Remove from oven. Top with caramel sauce. Recipe below.
Old Fashioned Caramel Sauce
Equipment
Ingredients
- 1/2 cup whipping cream
- 1/2 cup butter
- 1/2 cup brown sugar
Instructions
- Combine all ingredients in a small saucepan. Heat on medium and stir until butter is melted.
- Bring to a boil (no stirring) for 5 minutes until slightly thickened.
- Remove from heat and serve with cake!
