Gluten Free Burger with Bacon, Tangy Rhubarb BBQ Sauce & Jalapeno Cheese


This weeks burger combo is a mixture of seasonal and local flavours. I had been out to my sisters place recently and she had given me quite a bit of rhubarb from her garden. I love rhubarb but tend to think of it as a dessert/sweet item not a savoury one. So with making homemade sauces lately I decided to add rhubarb to a barbecue sauce and as always was pleased with the flavour.
I also made a remoulade sauce with bits of herbs and a couple of pickles left in a jar. That recipe is also included here.
Recipe: Tangy Rhubarb Barbeque Sauce
1 cup chopped fresh or frozen rhubarb
2/3 cup water
1 T Tabasco sauce 2 Tbsp Worcestershire sauce
1 cup ketchup (click for recipe)
2 Tbsp apple cider vinegar
2/3 cup brown sugar
1 tsp liquid smoke
1 Tbsp garlic chopped
1 onion chopped
1 tsp grapeseed oil
½ cup agave syrup (or you could use golden syrup)
1 Tbsp Dijon mustard
In a saucepan bring rhubarb and water to a boil. Turn down heat to simmer and cook for 5-10 minutes until tender. Time varies depending on fresh or frozen rhubarb. Remove from heat and add mixture to food processor.

Pulse rhubarb until mixture is smooth.
In same saucepan add oil and chopped onions. Cook on med until tender. Turn heat down to simmer and add garlic. Cook for 1 minute and then add all remaining ingredients including rhubarb.

Cook on med heat until mixture is boiling, add lid and turn heat down to simmer. Cook for 10-15 minutes, stirring occasionally.
Store in refrigerator.

Recipe: Tangy Remoulade
3 Tbsp chopped chives
2 tsp capers
1 tsp garlic
1 cup mayo
1 Tbsp grainy mustard
1 large dill pickle
2-3 drops Tabasco (optional)
In a food processor, pulse chives, capers, garlic and dill pickle until finely chopped. Add mayonnaise, mustard and hot sauce and blend until smooth.
Store in refrigerator.

Recipe: Gluten Free Burgers
Rhubarb sauce
Tangy remoulade
Spring lettuce
Jalapeno jack cheese
Thick sliced Bacon (2 strips/burger)
Gluten free hamburger buns
To assemble burgers first wrap uncooked patties in bacon.

Once bacon and burger are cooked, melt jalapeno cheese on top.
Spread remoulade sauce on toasted bun.

Place lettuce on remoulade and then grilled burger on lettuce.

Spread a dollop of rhubarb sauce on burger.

Place top on burger and enjoy!

Gluten Free Shrimp Cocktail Sauce

Ingredients
  

  • 1 tbsp f horseradish (I use Krakus jarred horseradish)
  • 1 cup ketchup
  • 1-2 tsp gluten free hot sauce
  • 1 tsp gluten free Worcestershire sauce
  • 1 tsp freshly squeeze lemon juice

Instructions
 

  • Combine all ingredients in a small bowl and whisk well.
  • Cover and place in the refrigerator until ready to use.
  • Enjoy!

A few weeks ago I posted a question on my Facebook page. I asked what kind of holiday recipes should I post?

The answer was overwhelmingly appetizers.

I think we all can remember the shrimp ring that was, and still is a familiar item on a buffet table.

I have yet to find a jarred gluten free one and after you see how easy this recipe is to make you will never have to look for one.

5 ingredients. That is all.

All you need is a small whisk, a small bowl, measuring scoops and the ingredients.

If you hadn’t realized it yet- I love my Meyer lemons! They are sweet and fabulous.
I could eat this curd straight out of the jar. It’s even better when it is freshly made and is warm and sweetly tart. Top waffles with lemon curd, or use it in my gluten free english scones. I like to slice fresh gluten free pound cake and top with it off with lemon curd.

Ingredients
  

  • 6 egg yolks
  • 1 cup sugar
  • 3/4 cup juice from meyer lemons
  • 1/4 cup butter
  • Zest from the Meyer lemons

Instructions
 

  • In a medium saucepan, whisk together the egg yolks and sugar.
  • Add the lemon juice and switch to using a wooden spoon to stir.
  • Stir continually for 8-12 minutes on low: making sure mixture does not boil.
  • Your curd is done when it thickens and coats the back of the spoon.
  • Next: add butter and stir until butter is melted.
  • Add lemon zest and remove from heat.
  • Store in a jar then place in refrigerator

Gluten-Free Chocolate Fudge Sauce


What is better on a hot sunny day than a chocolate fudge sundae for dessert? I am not sure, but tonight that is what I was craving. I had bought some fabulous cinnamon candied pecans awhile ago and decided to add them to a sundae.
Making chocolate sauce is really quite easy so I hope you give it a try.




Chocolate Fudge Sauce

Ingredients
  

  • 7 oz bittersweet chocolate
  • 4 tbsp butter
  • 2 tbsp white sugar
  • 2 tbsp corn syrup
  • 3/4 cup milk

Instructions
 

  • To make chocolate sauce, put all ingredients into a small but heavy saucepan.
  • Set over low heat. Stir gently until melted and smooth. Whisk slowly until mixture comes almost comes to a boil and remove from heat.
  • Serve immediately.
  • Store in refrigerator and reheat when needed.
  • I alternated hot sauce, with vanilla ice cream and cinnamon pecans. Yum!

Salad with Grapefruit Vinaigrette

Summer is here. Well summer is definitely in Sante Fe, New Mexico where my husband and I spent a week in July. We had never been to Sante Fe, and we were both pleasantly surprised with the food, the history and the art culture.



I thank our hosts for inviting us to Sante Fe and also want to thank the Sante Fe Cooking School for showing me some New Mexican flavors. One afternoon class, the chef shared a recipe for Spinach Salad with Shrimp, Avocado and Grapefruit.



I really enjoyed these flavors and decided to make a version of this salad once home to Calgary.
This is a great one dish salad to make on a hot sunny day, no oven required.

Grapefruit Vinaigrette

Ingredients
  

  • 1 grapefruit
  • Olive oil
  • Rice vinegar
  • ½-1 Tbsp white Sugar
  • Dash of cumin

Instructions
 

  • Over a bowl, cut out grapefruit segments. Place segments in a separate bowl.
  • Once segments removed squeeze all the juice out of the grapefruit and add ½ Tbsp of sugar, and 1 Tbsp rice vinegar.
  • In blender add zest, juice, sugar, vinegar and a dash of cumin.
  • Blend ingredients and then slowly drizzle olive oil in. Start with ½ cup of olive oil, but adjust for taste.

Salad

Ingredients
  

  • 1 Avocado
  • 1 bag 16/20 shrimp (5 shrimp per person)
  • PaprikaSalad Greens (spinach, arugula, romaine, bibb lettuce)
  • Pickled Onions*
  • Red pepper flakes
  • Goat cheese

Instructions
 

  • Make the pickled onions ahead of time for they need time to marinate. I made mine a couple of hours before, but with any pickling longer is better.

Pickled Onions

Instructions
 

  • Peel a red onion, and slice the onion thinly. Place in a bowl, cover halfway with rice vinegar. Add salt, pepper, 1 Tbsp sugar, and red pepper flakes. It should be sweet, salty and a bit spicy.
  • Let the onions marinate in this mixture as long as you like. The onions will wilt, become bright pink, and their flavors will mellow. I put the mixture into a large Ziploc bag and keep mine in the fridge.
  • For the shrimp, I thawed and cleaned the shrimp and then marinated them in a mixture of paprika, olive oil, salt and pepper. The amounts vary depending on the number of servings. (I only made 2 servings so I used 1 Tbsp of paprika.)
  • Marinate the shrimp for at least an hour.You can either grill the shrimp or heat them up in a frying pan, either way, remember that shrimp need only a couple of minutes to cook.
  • To assemble the salad, plate each plate with greens. Pour a little of the dressing over and give a quick toss. Then add grapefruit segments, grilled shrimp, sliced avocado, pickled onions and goat cheese.
  • Serve immediately.

I enjoyed this salad for it has the right mixture of sweet, tang, smoothness, heat and crunch. It was especially good on a hot sunny day.

Spaghetti Sauce


I am sure we all have our favorite spaghetti sauces and are really happy with them. However if you are looking for a change and want to try an easy spaghetti sauce that is also very delicious, please give this one a go.
I love how I can throw everything together in my La Crueset, turn the heat to simmer and leave it for a couple of hours to cook. Then all I have to do is make some gluten-free pasta.



Spaghetti Sauce

Ingredients
  

  • Package of lean ground beef
  • 1/2 – 1 onion finely chopped
  • 1 can tomato paste
  • 1 can tomato sauce
  • 2 cups water
  • 2 tbsp sugar
  • 2 tbsp dried oregano, basil, and parsley
  • 2 bay leaves
  • 1 tsp chili powder
  • Salt and pepper

Instructions
 

  • I use a La Crueset pot when I am making this sauce.
  • I can throw everything in, put the lid on and leave it on the stove for hours.
  • In your pot, turn heat to medium.
  • Add hamburger(*), tomato paste, tomato sauce, water and stir and cook for 10 minutes.
  • Turn heat to simmer and add all spices, sugar, garlic, bay leaves, and chili powder.
  • Simmer for 2 hours.
  • *do not brown hamburger in pot.
  • Let it cook in the liquids.
  • Once sauce is done, all you have to do is make some gluten free pasta of your choice.
  • This day I used spirals. Enjoy!

Romaine Salad with Creamy Parmesan Dressing

Made this salad last night and it was a hit for supper. It is tangy and crunchy!

Romaine Salad with Creamy Parmesan Dressing

Ingredients
  

  • 1/4 cup buttermilk
  • 3 tbsp  grated parmesan-reggiano or romano cheese
  • 2 tbsp mayonnaise
  • 2 tbsp white wine vinegar
  • 2 tbsp minced parsley/cilantro or even dill
  • 1/2 tsp Dijon mustard
  • 1/8 tsp Worcestershire sauce
  • 3 heads romaine lettuce chopped

Instructions
 

  • Whisk together buttermilk, grated cheese, mayo, vinegar, parsley, mustard, Worcestershire, and Tabasco.
  • Toss dressing with romaine lettuce just before serving.
  • Season with pepper.

Salsa with Falafel Chips

While cruising the aisles of Amaranth Whole Foods Market I discovered a new gluten free product: Falafel Chips. While they were quite pricey (almost $6.00) I decided to give them a try. And I was not disappointed.

These chips are described as high fiber, high protein, and full of flavor. And the description is correct for all. Just looking at the list of ingredients will tell you, how much flavor will be in the chip.

Falafel chips are made with corn, chickpeas, fava and black beans, and so many spices and herbs I was excited to try them. I loved the flavor! There are 2 kinds- original and spicy. And spicy they are!
So, what do you have with Falafel chips? Well, I make homemade salsa. Something I am making every week now, that I am finding fresh, organic vegetables at the farmers market.
Here is my salsa recipe for today. Please play with your own recipe. This is what I had on hand today, so this is todays salsa. Last week, I used more peppers and less tomatoes. Have fun with it!

Salsa

Ingredients
  

  • 3 mini jalapenos
  • 1 red chili pepper
  • 1 red pepper
  • 1 yellow pepper
  • Juice of 1 lime
  • Rind from 1 lime
  • Handful of cilantro, basil, and parsley
  • 14 grape tomatoes
  • 10 2 inch tomatoes on the vine

Instructions
 

  • **Make sure you wear latex gloves when cutting up jalapenos, and chili peppers.
  • In food processor, add cut-up jalapenos, chili pepper, red and yellow pepper. Process until it looks like salsa.
  • Add juice and rind of lime.Add basil, cilantro and parsley
  • Process again.
  • Add tomatoes and pulse 3-5 times until tomatoes are finely chopped.
  • And now, the easy part…dip a falafel chip into the salsa and enjoy!
