This olives and feta dip comes together in just 10 minutes with only a handful of ingredients. Ingredients like olive oil, mixed olives, dried oregano and rosemary, juice of a lemon and soft feta cheese. To make add olives, oregano, rosemary to a medium heat frying pan and add olive oil. Sauté for 5 minutes. Add mixture to whipped feta cheese and serve. Yum!

Lemony, tangy whipped feta topped with the flavours of the Mediterranean. Drizzled with more olive oil and then served with crispy homemade gluten-free toasts made with Schar baguettes.
My favorite dipper is toasted Schar gluten-free sliced baguette. To make you take a gluten-free baguette and slice it diagonally. The lightly butter each side and sprinkle garlic powder over each slice. Bake in a 350 degree oven for 10 minuets. At the 5 minute mark flip each slice. Remove and store in a ziploc bag until needed.

HOW TO MAKE THE DIP:
- Heat a frying pan on low/medium and add the olive oil.
- Add the olives and dried rosemary and oregano and saute for 5 minutes.
- Add the feta to a bowl and mix until smooth and creamy.
- Spread feta on a serving plate.
- Top feta with olive oil and fresh lemon juice.
- Pour hot olives over feta and serve.
Heating the dried oregano and rosemary in olive oil releases their flavour and the olives themselves becomes so tender and juicy. The perfect dish for entertaining and being that it is almost the holiday season here, this gluten-free dip would be lovely to serve your guests. Hot olives served over a creamy whipped feta is absolutely delicious.
This is the simplistic of gluten-free appetizers, yet so delicious. Creamy, salty and tangy are all combined in this olives and feta dip. Start with good olives. Do not buy the ones in jars or cans on the shelf at the grocery store. Go into the deli department and find the fresh ones. They are really so much better. My daughter many years ago took me to deli in Toronto at the farmers market. I really did not like olives before she took me there. He bought a few varieties and we went back to her place to try them. She heated them up and I could not believe how good those olives were. Treat your guests to good olives and they will really enjoy this appetizer.

Olives and Feta Dip
Equipment
Ingredients
- 3 Tbsp olive oil
- 1 Cup good olive mix
- 1 tsp dried oregano
- 1 tsp Dried rosemary
- 1/2 juice of lemon
- 1 1/2 cups soft feta I like to use a Macedonia soft feta
Instructions
- In a frying pan add 2 Tbsp olive oil and heat on low/medium
- Add the olives, dried rosemary and oregano.
- Saute for 5 minutes and stir.
- Add the feta to a mixing bowl and blend with a hand mixer until smooth and creamy.
- Spread the feta in a serving dish.
- Squeeze the lemon juice and rest of olive oil over the feta.
- Add the hot olives over the feta and serve.
