Mint Chocolate Sugar Scrub


It’s unbelievably dry here in Calgary. If anyone follows me on twitter you’ve probably noticed that I have been asking for remedies for my dry and cracked hands.
I received a lot of suggestions and I really appreciate all of them so thank you. Moving to a more humid climate isn’t an option unfortunately but the other suggestions were wonderful and helpful.
I am finding more and more lately that going back to basics is the way to go. What does that mean exactly?

  • Using fresh and organic ingredients to bake and cook with.
  • Canning during the year to capture the freshness of vegetables.
  • Avoiding added chemicals in skincare and hair products.
  • Making my own bath and shower goodies.

Basically I’m going back to the way my grandparents lived. Everything home-made and organically grown.
With December almost over and the New Year approaching, I’ve been thinking about what I want to share with you all in the New Year. I plan on showcasing frugal ways of making your own sauces, canned goods, and skin care. Sharing seasonal and fresh ingredients available here in Calgary. Sharing gluten free travel adventures that I have planned.
I’m starting with making a sugar body scrub. Specifically a mint chocolate scrub and a Meyer lemon sugar scrub. Both are so easy to make and great to use in the shower.
Plus these scrubs are quite inexpensive to make and are excellent home-made gifts.

Mint Chocolate Sugar Scrub

Ingredients
  

  • 1 cup organic sugar
  • 2 tbsp good quality dark chocolate cocoa
  • 1/2 cup canola oil
  • 1 tsp peppermint extract OR
  • 2 drops peppermint oil

Instructions
 

  • Mix together in a large bowl the sugar and cocoa.
  • Add the canola oil and stir to combine.
  • Spoon sugar scrub into canning jar. Top sugar scrub with a little more canola oil.
  • Screw on jar lid.

Ingredients
  

  • 2 cups organic sugar
  • 3 Meyer lemons zest
  • 1/4 – 1/2 cup Meyer lemon juice
  • 1/2 cup canola oil
  • 1 tsp dried orange zest
  • 1 tsp dried lemon zest

Instructions
 

  • In a large bowl, combine sugar, zest and juice from meyer lemons.
  • Add oil and stir to combine.
  • Spoon into canning jars.

“Venti 1/2 sweet Chai tea latte with Lactaid.”

That’s my favorite drink from Starbucks during the winter season. These days that drink costs me around $5.00 which is crazy. I love Starbucks but I’m finding the increased prices a bit much.
So what to do?
Well in the fall I made homemade pumpkin spice syrup so that I could make my own pumpkin spice tea lattes. Now I can make my own 1/2 sweet chai lattes in the comfort of my own home, and so can you! ????
This concentrate has very little brown sugar in it but feel free to increase the amount if you have a real sweet tooth.This concentrate makes an excellent Christmas gift as well. Store it in a decorative glass jar.

Gluten-Free Homemade Chai Concentrate

Ingredients
  

  • 5 cups water
  • 10 bags of black tea (earl grey, orange pekoe, or english breakfast)
  • 2 cinnamon sticks
  • 1 vanilla bean, sliced in half
  • 1/2 cup brown sugar
  • 12 whole cloves
  • 9 cardamon pods
  • 1/2 tsp freshly ground nutmeg
  • 3 star anise pods
  • 1/2 tsp black peppercorns
  • 8 corriander seeds
  • 1/2 tsp ground allspice
  • 1 tbsp orange zest
  • 1 inch piece of fresh ginger, sliced
  • 1 tbsp honey

Instructions
 

  • In a large pot, bring water to a boil.
  • Add tea bags, spices, zest and ginger.
  • Reduce heat, cover and simmer for 25 minutes.
  • Remove from heat, stir in honey and let it stand for 10-15 minutes.
  • Strain concentrate.
  • Discard the spices.
  • Then pour concentrate into glass jars and keep in refrigerator for 2 weeks.
  • Use 1/4 cup of concentrate per large mug.
  • I use a combination of milk, water and concentrate for my chai latte.

Gluten Free Homemade Pasta

Gluten free pasta. Fresh pasta, not the dried stuff you buy in the grocery store. Nope, this is the real thing. And guess what? It is a really easy thing to make. Do not be intimidated by the thought of fresh pasta. If you can roll out sugar cookies, you can make pasta.
I am heading off to Sante Fe for a week, so this is a short post. I cannot wait to eat there. Fresh corn tortillas, many different varieties of chilis. To me, it is a mecca of gluten free foods to be eaten and enjoyed. I am taking a couple of cooking classes while I am there and will share what I learn on further posts.

Gluten Free Pasta Dough

Ingredients
  

  • 1 1/2 cups sweet rice flour
  • 1/2 cup tapioca starch
  • 1 tsp xanthan gum
  • 1/4 tsp salt
  • 5 eggs

Instructions
 

  • Combine all dry ingredients in a stand mixer and incorporate well.
  • Add eggs one at a time on low until a smooth dough forms and pulls away from sides of bowl.
  • Remove dough from bowl.
  • Cover your dough with a damp towel to ensure it does not dry out.
  • Prepare your counter by sprinkling tapioca starch on your work surface as well as dusting your rolling pin with starch.
  • Roll out dough onto counter, try to get as thin as possible-adding more starch as you go so that the dough does not stick to your rolling pin.
  • Slice pasta with a knife.
  • Add pasta in batches to a large boiling, salted pasta pot.
  • Fresh pasta only takes minutes to cook so watch closely.
  • This pasta was so tasty on its own that I served it with just fresh butter and Parmesan cheese.

Homemade Gluten Free Bread



Here is a recipe for gluten free bread. I was able to make this bread using my bread machine, which meant eating homemade bread in a relative short period of time.
This bread had a crispy crust and was light and soft. Again, not something you get from the frozen loafs of bread you buy in the grocery store.
The key to making a good gluten free loaf of bread in a bread machine is to mix all the ingredients in a kitchen aid mixer first. Gluten free flours need a lot of mixing to incorporate them, and bread machines do not have enough power to do that.
This recipe is not my own but was handed to me by a customer at work. No name was attached so I take no credit for the recipe, but also am not able to give credit to the original author.




Homemade Gluten Free Bread

Ingredients
  

  • 1 cup tapioca starch
  • 2 tbsp tapioca starch
  • 3/4 cup brown rice flour
  • 3/4 cup potato starch
  • 2 tsp xanthan gum
  • 3/4 tsp salt
  • 1 tbsp sugar
  • 2 tsp instant yeast
  • 1 egg
  • 1 egg white
  • 3/4 tsp cider vinegar
  • 1 1/2 tsp canola oil
  • 1 1/3 cup milk(warmed)

Instructions
 

  • Measure and mix dry ingredients.
  • Beat eggs.
  • Add them, along with milk, oil and vinegar to dry ingredients.
  • Mix thoroughly in a stand mixer to fully incorporate all ingredients.
  • Add dough to bread machine.
  • Set bread machine to gluten free setting, 1 ½ lb loaf size and dark crust.
  • Let bread cool on its side before cutting.
  • Enjoy!
