Bestest Gluten Free Chocolate Chip Cookies

Ingredients
  

  • 3/4 cup butter, softened (or use Earth Balance vegan “butter” for DF version)
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 1/4 cup gluten free flour blend (I used Compliments GF flour available at Safeway and Sobeys)
  • 3/4 cup baking soda
  • 1/4 tsp salt
  • 1/2 cup gluten free rolled oats
  • 1/2 cup unsweetened coconut
  • 1/2 cup raw pecans, chopped
  • 1/2 cup dark chocolate chips (I used Enjoy Life chocolate chips)
  • another 1/2 cup mini or chunky chocolate chips for a real boost of chocolate in the cookie. Optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 baking sheets with parchment paper.
  • In a stand mixer beat the butter until soft.
  • Add the brown and white sugar and beat together, scraping sides of pan to incorporate all.
  • Add the 2 large eggs and mix again.
  • Scrape sides of bowl to incorporate all.
  • Add the vanilla.
  • In a small bowl whisk the gluten free flour, baking soda and salt.
  • Add dry ingredients and mix well.
  • Add the coconut and rolled oats and mix for just a minute.
  • Add the pecans and chocolate chips and mix on low.
  • I used an ice cream scoop to portion the cookie batter onto the lined cookie sheets.
  • Bake in oven for 10-12 minutes.
  • Let cool on rack.
  • Enjoy!

Firstly I am shocked I never shared this recipe. I really thought I had until I went to make chocolate chip cookies the other day and realized the recipe was not on my blog.

I apologize.

Sometimes I come up with 3 or more new recipes, take photos, remake the recipe, share the photos on social media and then go on to the next new recipe and realize I never actually shared it on my blog.

This recipe rocks – truly and can be made both with dairy and dairy free and with each version it is still amazing.

The iconic sandwich turned into a cookie. These are the perfect cookie for PB and jam fans. Gluten-free peanut butter and jam cookies that are so easy to throw together. Simple pantry ingredients like vegan butter, peanut butter, sugar, gluten-free flour, egg, chopped peanuts and jam.

These gluten-free peanut butter and jam cookies combine a soft pb cookie, crushed peanuts and a sweet jam filling. A cookie that you can enjoy for breakfast with your morning coffee. They are a great afternoon treat, or grab-and-go snack too. The PB and Jam cookies are dairy-free because I used vegan butter and a bit of coconut milk.

HOW TO MAKE THE PB COOKIES:

  1. In a stand mixer (or use a medium bowl and hand mixer) beat the vegan butter, peanut butter and sugar.
  2. Scrape sides of bowl and mix again until creamy.
  3. Add the egg and coconut milk and mix again on medium speed.
  4. Add the gluten-free flour, baking soda and salt and mix on low speed.
  5. Increase speed to medium and mix for a couple minutes until batter is smooth.
  6. Place dough in the refrigerator and let it chill for an hour.
  7. Preheat oven to 350 degrees.
  8. Line 2 cookie sheets with parchment paper or silpats.
  9. Remove dough from fridge.
  10. Use an ice cream scoop to drop dough onto cookie sheet.
  11. Use your finger or a small spoon to make an indent in each cookie.
  12. Sprinkle each cookie with chopped peanuts.
  13. Fill each indentation with jam.
  14. Bake in oven for 10-11 minutes.
  15. Remove and cool.

Ingredients
  

  • 1/2 cup vegan butter
  • 1/2 cup unsweetened peanut butter
  • 3/4 cup white sugar (or 1/2 cup Truvia sweetener)
  • 1 1/2 cups gluten free flour blend (1 to 1)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 1 tbsp coconut milk
  • 1/4 cup finely chopped raw peanuts
  • 1/3 cup jam

Instructions
 

  • In a stand mixer beat the vegan butter with the peanut butter and the sugar.
  • Scrape sides of bowl and mix again until creamy.
  • Add in the egg and coconut milk and mix on medium speed.
  • Mix on low and add the gluten free flour blend, salt and baking soda.
  • Increase speed to medium and mix until creamy.
  • Place dough in refrigerator and chill for an hour.
  • Preheat oven to 375 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Use a medium ice cream scoop to drop dough onto cookie sheet.
  • Use your finger or a small spoon to make an indent in each cookie.
  • Sprinkle chopepd peanuts onto each cookie.
  • Fill each indentation with jam.
  • Bake in oven for 10-11 minutes.

Gluten Free Dairy Free Pinwheel Cookies!
Not only are these cookies gluten free they are also dairy free.
If you have been following me this month you will notice I have tried to make all the recipes dairy free. I have been using Earth Balance vegan “butter” sticks in most of my recipes. I find these vegan “butter” sticks work really well in cookie recipes.
Pinwheel cookies may look complicated but they are really not that hard to do.
Just follow a few simple steps:

  1. Make the dough.
  2. Chill in refrigerator over night.
  3. Roll vanilla and chocolate dough onto 2 pieces of parchment paper.
  4. Invert the rolled chocolate dough and place on the vanilla dough.
  5. Use the parchment to roll up the 2 doughs together.
  6. Place rolled dough into refrigerator and chill for at least an hour.
  7. Slice up dough and bake in oven.

See! Not hard.

This recipe made about 22 cookies.

Gluten Free Dairy Free Pinwheel Cookies

Ingredients
  

  • 3/4 cup Earth Balance vegan “butter”, softened
  • 3/4 cup white sugar
  • 2 cups gluten free flour blend (I like to use Compliments gluten free flour blend)
  • 1 tsp gluten free baking powder
  • 1/4 tsp salt
  • 2 tsp pure vanilla
  • 1 large egg
  • 1/4 cup cocoa powder

Instructions
 

  • In a stand mixer beat the vegan “butter with the sugar until creamy.
  • Add the vanilla and egg and beat again.
  • Scrape sides of bowl to incorporate all.
  • Add in the gluten free flour, salt and baking powder and mix on low speed.
  • Increase speed to medium/high and mix well.
  • Divide dough into 2 parts.
  • Add cocoa powder to one of the parts and mix in well.
  • Place each dough into a bowl and chill in refrigerator over night.
  • Roll each dough on a sheet of parchment paper. 
  • Use a bit of gluten free flour to prevent dough sticking to rolling pin.
  • Invert rolled chocolate dough onto the rolled vanilla dough.
  • Roll up the cookie dough like a jelly roll.
  • Wrap up with saran wrap and place roll in refrigerator.
  • Chill for at least an hour.
  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Remove dough from refrigerator and slice the dough into disks.
  • Place disk onto cookie sheets and bake for 12 minutes.
  • Remove from oven and cool.
  • Enjoy!

I decided to add dried cherries, pistachios and chocolate chips to the meringue batter.
This cookie is also delicious plain so feel free to add or subtract your own added ingredients.

Gluten Free Dairy Free Cherry Pistachio Meringue Pillows

Ingredients
  

  • egg whites (or you can used 8 Tbsp of liquid egg whites)
  • 1 1/4 cup white sugar
  • 1/4 cup dried cherries
  • 1/4 cup Enjoy Life dark chocolate chips
  • 1/4 cup pistachios

Instructions
 

  • Remove egg whites from refrigerator and bring to room temperature.
  • Preheat oven to 300 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a stand mixer add the egg whites and beat on high until soft peaks form.
  • Slowly add the white sugar and beat on high until stiff glossy peaks form.
  • This can take awhile.
  • Fold in the chocolate chips, cherries and pistachios.
  • Use a large ice cream scoop to drop dough onto the lined cookie sheets.
  • Bake in oven for 20 minutes.
  • Remove from oven and cool.
  • Enjoy!

Gluten Free Dairy Free Coconut Cranberry Macaroons

This is another gluten and dairy free cookie recipe and one that is easy to make.
I added dried cranberries and pecan pieces to some of the cookie dough and left other cookies plain.
Another fun thing to do with these cookies is to dip them in melted chocolate.
Melt Enjoy Life chocolate chips with a bit of coconut oil in the microwave. Dip bottoms of cookies into the melted chocolate, place cookies on a small cookie sheet and then in the refrigerator to set.

This recipe made about 27 small cookies

Gluten Free Dairy Free Coconut Cranberry Macaroons

Ingredients
  

  • 4 egg whites (or 8 Tbsp of liquid egg whites)
  • 2/3 cup white sugar
  • 1 tsp vanilla paste
  • 1 1/2 cup shredded unsweetened coconut
  • 1/2 cup gluten free flour blend (I use Compliments gluten free flour blend)
  • * optional 1/4 cup dried cranberries and 1/4 cup chopped pecans

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In medium bowl beat the egg whites and sugar with a hand mixer.
  • Mix for a few minutes.
  • Add the vanilla paste and mix again.
  • Add the gluten free flour and shredded coconut and mix on low speed until combined.
  • Stir in the cranberries and pecans.
  • Let dough rest for 5 minutes.
  • Use a small ice cream scoop to drop dough onto lined cookie sheets.
  • Bake in oven for 15-17 minutes.
  • Remove from oven and cool.
  • Once cool you have the option of dipping bottom of cookies in melted chocolate.
  • Enjoy!

Do you remember Poppycock?
As a kid it was a caramel popcorn treat that came in a large tin. It was a special treat that we only had at Christmas.
I was planning out my new cookie recipes and thought of Poppycock. Why not make a gluten and dairy free cookie with vegan caramel, popcorn and pecans.
Sound good?
This cookie has 2 steps.

  1. Make the vegan caramel on the stove and cool it in the refrigerator for 3-4 hours,
  2. then make the cookie dough.

This cookie dough does not need to be refrigerated so feel free to make the vegan caramel ahead of time.

Gluten Free Poppycock Cookies

Ingredients
  

  • 1/2 cup Earth Balance vegan “butter”, softened
  • 1/2 cup Earth Balance vegan “shortening”, softened
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla
  • 1/4 tsp salt
  • 1/2 tsp cinnamon and nutmeg
  • 1 tsp baking soda
  • 2 1/2 cups gluten free flour (I like to use Compliments gluten free flour blend)
  • 1/2 cups chopped toasted pecans
  • 1 cup unsalted popped popcorn
  • * extra popcorn and pecans to top cookies, see instructions
  • 1/4 cup vegan caramel **

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a small bowl mix the pecans and popcorn with the vegan caramel.
  • Stir.
  • In a stand mixer cream the butter and shortening together with the brown sugar.
  • Beat on medium speed.
  • Scrape sides of bowl occasionally.
  • Add the baking soda, spices and salt and mix again.
  • Beat in the eggs and vanilla until smooth.
  • Again scraping sides of bowl.Add the gluten free flour blend and mix on low speed.
  • Increase speed to medium and beat until batter is smooth.
  • Stir in the caramel popcorn/pecan mixture into the batter.
  • Use a medium ice cream scoop to drop dough onto lined cookie sheet.
  • Press dough down and place some *popcorn, pecans and a drizzle of caramel on each cookie before baking.
  • Bake in oven for 12 minutes.
  • Enjoy!

**Vegan Caramel

Ingredients
  

  • 1 1/2 cup coconut milk
  • 3/4 cup brown sugar

Instructions
 

  • In a small saucepan whisk the coconut milk with the brown sugar.
  • Heat on medium/high heat watching and stirring until mixture boils.
  • Turn down to low/medium and cook for 15 minutes.
  • Stirring occasionally.
  • Remove from heat and cool in refrigerator.

Gluten Free Dairy Free Gingerbread

Ingredients
  

  • 1/2 cup Earth Balance vegan “butter”, softened
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger and cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp salt
  • 1 large egg
  • 1 tbsp apple cider vinegar
  • 1/2 cup gluten free molasses
  • 3 cups gluten free flour blend (I like to use Compliments gluten free flour blend)

Instructions
 

  • In a stand mixer beat the vegan “butter” with the brown sugar. 
  • Scrap the sides of the bowl to incorporate all.
  • Add the baking powder, baking soda, spices and salt and mix in.
  • Add the egg, molasses and apple cider vinegar and mix on low speed.
  • Scrape sides of bowl and beat mixture well.
  • Add the gluten free flour and mix on low speed.
  • Increase speed to medium and beat dough really well.
  • Place dough in refrigerator for 3 hours or overnight to chill.
  • Preheat oven to 375 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Lightly flour the countertop with gluten free flour.
  • Divide dough in half and roll out with a rolling pin.
  • Dust dough lightly with gluten free flour before rolling to prevent sticking.
  • Cut out dough with various cookie cutters.
  • Place on cookie sheet and bake for 9-10 minutes.
  • Remove and cool.
  • Enjoy!

These gluten-free dairy-free sugar cookies are medium soft when baked but if you want a crispier cookie bake them for 2 minutes more. You can easily double the recipe for a larger batch.

Making Gluten and Dairy-Free Sugar Cookies

These sugar cookies are easily made with ingredients you probably have on hand. All you need is:

. Gluten-Free Flour

. Vegan Butter

. non-dairy milk

. sugar

. egg

Simply whisk the dry ingredients together. Beat the butter and sugar together and add in the egg, milk and vanilla. Add the dry ingredients and mix on low-medium speed until you have a smooth dough. Chill in fridge and then you are ready to roll out the dough.

  • 1/4 tsp salt
  • 1 tsp pure vanilla
  • * tapioca starch is needed when you go to roll out sugar cookies.

Instructions
 

  • In a stand mixer beat the vegan “butter” with the sugar for a minute.
  • Scrape sides of bowl when needed.
  • Add the baking powder and salt and mix for a second.
  • Add in the egg, goat milk and vanilla and beat again until smooth.
  • Scrape sides of bowl as needed.
  • Slowly add the gluten free flour on low speed.
  • Increase speed to medium and beat until you have a smooth batter.
  • Place batter into the refrigerator for a couple of hours to chill.
  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Lightly flour you countertop with the tapioca starch.
  • Cut dough in 1/2 and roll out dough with a rolling pin.
  • Dust top of dough when you are rolling it out.
  • Use cookie cutters and cut-out shapes in the rolled dough.
  • Place cut-outs on lined cookie sheets and bake for 8-10 minutes.
  • Let cool completely before icing them.
  • I like to use a small paintbrush when I icing my cookies.
  • I mix icing sugar with a small amount of goat milk and then food coloring.
  • This technique is great for kids too.
  • They love to PAINT cookies! I find when the icing dries it looks a lot like stained glass too.

Gluten Free No-Bake Date Cookies.
Here is the 12th new cookie recipe for the month of December, #20daysofcookies, where I will share 20 new gluten free cookie recipes from December 1-20. Make sure you subscribe to receive each one!
This is one of the easiest cookies to make. In fact, it only has 4 ingredients and one of those ingredients is water.
For those of you on a grain free or paleo diet, these cookies are a sweet you can enjoy.

These gluten and dairy-free no bake date cookies only require 4 simple ingredients.

Gluten Free No-Bake Date Cookies

Ingredients
  

  • This recipe makes 19 balls.
  • 1 cup pitted dates
  • 1 cup unsweetened shredded coconut
  • 1/2 cup toasted pistachios
  • 3 tsp water
  • Optional Topping:
  • 1 tbsp coconut oil. melted
  • 1/4 cup Enjoy Life Dark Chocolate Chips

Instructions
 

  • In a food processor, process the dates, coconut and pistachios.
  • Add 1 tsp of water at a time, while pulsing mixture.
  • Line a small cookie sheet with parchment paper.
  • Use a small ice cream scoop and to scoop up date mixture.
  • Roll into a ball shape with your hands.
  • Place balls on cookie sheet and place in refrigerator for an hour.
  • After an hour you can add the topping.
  • Optional Topping:
  • In a small microwave safe bowl, melt the coconut oil and chocolate chips.
  • Stir.
  • Drizzle a bit of chocolate onto each ball.
  • Place back in the refrigerator to set.
  • Enjoy!

Gluten Free Fudgy Espresso Cookies

I find that coffee adds a richness to chocolate. I am not a coffee drinker but in cookies I like it. This gluten free and dairy free cookie recipe takes no time to make.

Gluten Free Fudgy Espresso Cookies

Ingredients
  

  • 7 tbsp gluten free flour blend (I like to use Compliments gluten free flour blend)
  • 1 1/2 cups solid bittersweet chocolate or dark chocolate, chopped
  • 2 tbsp cooled strong coffee ( leftover coffee from morning pot works well)
  • 1/2 cup white sugar
  • 2 large eggs
  • 1/2 tsp gluten free baking powder
  • pinch salt
  • 2 tbsp Earth Balance “vegan” butter
  • 1 tsp espresso powder
  • 1 tsp good quality vanilla
  • 1/2 cup Enjoy Life dark chocolate chips
  • 1 tbsp of icing sugar to dust cookies with

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a small saucepan melt the chopped chocolate, vegan “butter”, and espresso powder on low heat.
  • Cook until chocolate is melted.
  • Stir.
  • Remove from heat.
  • In a medium bowl beat the eggs, coffee, vanilla and sugar with a hand mixer for a few minutes.
  • In a small bowl whisk the gluten free flour blend, baking powder and the salt.
  • Pour the melted chocolate mixture into the egg mixture and beat until combined.
  • Add the dry ingredients and mix.
  • Batter will be very thick.
  • Stir in the chocolate chips.
  • Use a medium ice cream scoop to drop cookie batter on to the lined cookie sheets.
  • Dust cookies with a bit of icing sugar on each cookie before baking.
  • Bake in oven for 10-11 minutes.
  • Remove from oven.
  • Enjoy!
