Jicama, Carrot and Apple Slaw

Ingredients
  

  • 1 cup jicama, spiralized into a zoodle
  • 1 cup jicama, cut up into small matchsticks
  • 1 cup carrot, spiralized into a zoodle
  • 1 cup carrot, cut up into small matchsticks
  • 1 Asian pear 1/2 spiralized into a zoodle the other half into small matchsticks
  • 1 cup zucchini, spiralized into a zoodle
  • 1 lime, cut in half

Lime Chive vinaigrette

  • 1/2 cup olive oil
  • 1 tsp maple syrup
  • Juice of 1/2 lime
  • 1 tbsp chopped chives

Spicy Peanut Dressing

  • 1/4 cup peanut butter
  • Juice from 1 lime
  • 1/4 tsp ground ginger
  • 1 tsp sriracha
  • 1 tbsp maple syrup
  • Pinch of salt

Instructions
 

Lime Chive vinaigrette

  • Combine all ingredients into a magic bullet or blender and blend.
  • Pour into a small jar.

Spicy Peanut Dressing

  • Combine all ingredients into a magic bullet or blender and process until smooth.
  • Pour into a bowl.

Jicama, Carrot and Apple Slaw

  • On a large plate or platter place individual zoodles and matchsticks onto mounds on the plate.
  • Place the lime halves on to the plate.
  • Pour half of the lime chive vinaigrette on to each of the ingredients.
  • Place a bowl of the remainder lime chive vinaigrette and the spicy peanut dressing on the side of the plate to serve.

Do you have a spiralizer?

You know those kitchen gadgets that slices vegetables into noodles?

Well, I have had one for awhile and I highly recommend getting one.

Why?

There is something about eating vegetables as a noodle shape changes the taste of them-seriously.

I was never a big raw zucchini fan but spiralizing into a noodle shape I can eat gobs in my salads or at supper with my homemade meat sauce.

It is a really easy way to get your kids to eat more vegetables too. Nothing like thinly cut ribbons of cucumber or sweet and crunchy jicama to get a kid to eat them.

Instead of just lettuce and cut up cukes in my salads I now add carrot and zucchini zoodles which adds even more fiber to my salads.

So I am sharing a new slaw recipe with you all today but not just an ordinary slaw. One that has jicama, carrot, pear and zucchini zoodles in it plus matchstick pieces of those same ingredients.

I like plating the slaw on a large plate or platter with individual mounds of the various ingredients. It makes for a fun and interesting serving experience.

Two dressings are included in this recipe. One is a lime chive vinaigrette that you can pour half over your slaw ingredients and serve the other half on the side, plus I have a a spicy peanut dressing that I love love!

Add a couple bbq chicken breasts or pork tenderloin to this and you have a low carb healthy meal.

Baked Carrot Fries

Ingredients
  

  • 2 very large carrots (about 2- 2 1/2 cups of carrot sticks)
  • 3 tbsp olive or avocado oil
  • 2 tbsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • salt

Instructions
 

  • Preheat oven to 425 degrees.
  • Line a cookie sheet with parchment paper.
  • Use a mandoline to cut carrots into 1/2 inch wide matchsticks.
  • In a bowl toss the carrots with the olive oil, oregano, garlic and cumin.

Who doesn’t like fries?

Isn’t it the ultimate indulgence when you go out to eat to order fries with your meal?

Well, for some of us, meaning me, who are watching their carb intake, eating potato fries are out of the question.

But the thing is, sometimes I really crave some salt fries.

So, what to do?

For me, it means making a batch of these baked carrot fries. I can get my salty kick without feeling guilty about all the carbs in regular potato fries.

Plus these ones are baked, not deep fried.

Gluten Free Zucchini Carrot Parmesan Muffins

GLUTEN FREE ZUCCHINI CARROT PARMESAN MUFFINS

Ingredients
  

  • 1 cup shredded zucchini
  • 1 cup shredded carrot
  • 1/2-3/4 cup shredded cheese (I made a mix of old and Parmesan cheese)
  • 1/2 cup Quaker gluten free oats
  • 1 1/2 cup Bob’s Red Mill gluten free flour blend
  • 1- 1 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1/2 cup canola oil

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 12 cup muffin pan with liners.
  • In a stand mixer add the eggs, oil and sugar and mix until blended.
  • Add the oats, gluten free flour, salt and baking powder and mix on medium speed.
  • On low speed add the shredded zucchini, carrot and cheese and blend well.
  • Drop spoonfuls of batter into lined muffin pan. Bake in oven for 20-22 minutes.
  • Remove and cool.

This is my favourite time at the farmers markets and we are so lucky in Calgary to have many many markets to choose from. I am blessed to live in a province that grows a ton of veggies and we are close enough to BC to get all their bounty of fruit.

It is the time of year when eating seasonally is the best! I love it until thanksgiving here in October and maybe that is why thanksgiving is one of my favourite holidays for I have so much local produce available to me.

Recently I picked up a giant zucchini so you, my followers will be lucky enough to get a ton of new gluten free zucchini recipes coming. Zucchini crackers, grilled zucchini rolled lasagna, chocolate zucchini bread and this recipe- Zucchini Carrot Parmesan Muffins.

These muffins would be a great substitute for a sandwich in a kids lunch. It is a savoury muffin yet tastes sweet with the shredded carrot in it.

I used Bob’s Red Mill gluten free flour 1 to 1 and I find it is available most anywhere. It is a nice light gluten free flour that I find works well in baking.

Not only is this a gluten free lasagna that tastes like white pasta it is an oven ready noodle. No need to boil the pasta first. It is also made from a unique 4 grain blend of white rice, brown rice, corn and quinoa.
I was sent a case of gluten free lasagna noodles to try and was also encouraged to come up with a new recipe. That was an easy assignment for me.
Who does not like lasagna?
Lasagna was also a family favourite when the kids were younger for it was a great way to fill up teenagers ever-empty stomachs.
Lasagna is also a sneaky way of getting your kids to eat more veggies.

I call it shredding!
A food processor is fantastic at shredding veggies and is a great way of replacing half your meat in a recipe with veggies. In fact, when my kids were younger I used to shred up mushrooms and sauté them in olive oil and not use any meat at all in my lasagnas. Guess what?
No one knew. The mushrooms resemble ground beef when sautéed first and added to pasta sauce.
Maybe I should have called this recipe “A Sneaky Way to get your kids to eat more veggies lasagna.”
I used shredded mushrooms and carrots in this recipe. Carrots add a nice sweetness to the lasagna too.
Not only am I sharing a gluten free lasagna recipe with you all I am also doing a contest too.

Gluten Free Sausage, Mushroom and Carrot Lasagna

Ingredients
  

  • 1 pkg Catelli gluten free lasagna
  • 1 shallot, finely chopped
  • 1 tbsp olive oil
  • 1 pkg Johnsonville mild italian sausage meat
  • 1 large container fresh white or brown mushrooms
  • 4 carrots, peeled
  • 750 ml Antonella’s gluten free tomato basil sauce
  • 1 tsp dried oregano and basil
  • 1 tsp sriracha
  • 3 cups shredded mozzarella cheese

Instructions
 

  • Shred carrots and mushrooms in a food processor.
  • Set aside.
  • Sauté chopped onion and olive oil in a large frying pan for 3 minutes.
  • Add sausage meat and increase heat to medium.
  • Break up meat with a wooden spoon while it is cooking so that you have small pieces.
  • Cook until sausage meat is no longer pink.
  • Add shredded carrots and mushrooms and stir.
  • Add dried herbs plus sriracha, stir and continue cooking for 10 minutes.
  • Add gluten free tomato basil sauce and stir to combine.
  • Turn heat to low and simmer for another 10 minutes.
  • Remove from heat.
  • Preheat oven to 350 degrees.
  • Use a very deep square baking dish or a shallow 9 x 13 pan for lasagna.
  • Layer 1/2 cup of the sauce on bottom of pan.
  • Add a layer of gluten free lasagna noodles.
  • Add 1/2-3/4 cup of shredded cheese on top of noodles.
  • Spread 1 cup meat sauce over shredded cheese.
  • Continue to alternate layers.
  • You want your last layer to be a topping of the shredded cheese.
  • Cover lasagna with aluminum foil and bake for 20 minutes.
  • Remove aluminum foil and continue baking for another 20 minutes.
  • Remove lasagna from oven and let cool 10 minutes before cutting.

Anyone who knows me, knows I am a big muffin fan. I am thrilled to share another gluten-free muffin recipe that is delicious. I have shared muffin recipes like sourdough banana muffins, banana bran muffins, cranberry muffins and keto coffee cake muffins plus many more.

A lot of gluten-free baking tends to be high in starch, so I decided to add brown rice bran to the batter. Adding the bran and shredded carrot and apple lends this muffin to be higher in fibre.

INGREDIENTS NEEDED TO MAKE THE MUFFINS:

These gluten and dairy-free carrot apple bran muffins are not too sweet and are moist and nutritious. A carrot bran muffin that is great for breakfast with a cup of coffee or tea in the morning.

HOW TO MAKE THE MUFFINS:

  1. Preheat oven to 350 degrees.
  2. Line a 12 cup muffin pan with paper liners.
  3. In a stand mixer (or use a hand mixer with a medium bowl) add the oil, coconut milk, apple cider vinegar and eggs. Beat well.
  4. Add the raisins, shredded carrot and apple and mix on low speed.
  5. In a small bowl add the gluten-free flour, brown rice bran, baking soda, baking powder, cinnamon, sugar and salt and whisk.
  6. Add the dry ingredients to the wet and mix on low speed.
  7. Increase speed to medium and beat for a couple of minutes.
  8. Use an ice cream scoop to drop batter into lined muffin tin.
  9. Bake in oven for 22-25 minutes.
  10. Remove and cool.

  • 1 container Tofutti no-dairy cream cheese
  • 1/4 cup icing sugar
  • 1 Tbsp vegan butter
  • 1/4 tsp cinnamon

  • Preheat oven to 350 degrees.
  • Line a 12-cup muffin tin with paper cupcake liners.

Gluten Free Dairy Free Carrot Cake

Ingredients
  

  • 2 cups gluten free Sobeys Compliments gluten free flour blend
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp cardamon
  • 1/4 tsp xanthan gum
  • 1 tsp apple cider vinegar
  • 2 cups brown sugar
  • 1 1/4 cups canola oil
  • 4 large eggs
  • 1 cup raw chopped almonds
  • 3 cups grated carrots

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a small springform pan with parchment paper.
  • In a medium bowl whisk the gluten free flour, spices, baking soda, salt and xanthan gum.
  • In a stand mixer beat the brown sugar, apple cider vinegar and oil until blended.
  • Add the eggs, one at a time until batter is smooth.
  • Slowly add the dry ingredients until batter is blended.
  • Add the shredded carrots and almonds and mix on low.
  • Pour batter into springform pan.
  • Bake in oven for 50-60 minutes.
  • I allow the variance in times because it took a full 60 minutes for it to bake for me, however I am at a high altitude and a lower altitude would take less time.
  • Allow cake to cool on a wire rack.
  • Once cooled, cut cake in 1/2 and icing.
  • For the dairy free icing I use Tofutti cream cheese which is a dairy free product.
  • I find this cream cheese substitutes wonderfully for an icing and in fact is beats up quite smoothly.
  • For this cake I used 2 containers of Tofutti cream cheese, 2 Tbsp softened vegan butter, 1/2 tsp vanilla paste and about 1/2 cup icing sugar.
  • I am not a big fan of over using icing sugar in icing recipes.
