Chocolate Almond Cookies

Ingredients
  

  • 1 cup softened butter or vegan butter. I used the new Becel soft sticks and loved them.
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp good vanilla
  • 3/4 cup good quality cocoa
  • 1 tsp baking soda
  • 3/4 cup chopped raw almonds ( or substitute another nut you like)
  • 2 cups gluten free flour blend (I recommend the Compliments gluten free flour blend found at Safeway and Sobeys or Bob’s Red Mill 1 to 1 gluten free flour blend)

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheet with parchment paper.
  • In a stand mixer add the softened butter(vegan butter or Becel soft sticks) plus the sugars and mix well.
  • Add the eggs and mix again, scraping sides of bowl to make sure all is incorporated.
  • In a small bowl whisk the gluten free flour, baking soda and the cocoa.
  • Add the vanilla and then the dry ingredients to the mixer and mix until well combined.
  • I like to increase speed for a minute to add a bit of air into the batter too.
  • Add the nuts and mix.
  • Use an ice cream scoop to coop out batter onto the parchment lined cookie sheets.
  • Bake for 10-12 minutes.
  • Remove and cool.

I cannot share new recipes this late in December without sharing at least one new gluten free cookie recipe.

What I love about this cookie recipe is that you can add to it.

What does that mean?

You can add more nuts to the batter if you are a nutty filled cookie person, or you can find the best dark cocoa you can afford to the batter as well as dark chocolate chips and then sprinkle smoked Maldon Sea salt on the cookie before it is baked, or like me you can try adding pieces of chocolate bars or toffee pieces on the top of the cookie dough before it is baked and see how that works.

This recipe for Chocolate Almond Cookies is a great starter cookie recipe, meaning play, play PLAY folks with the recipe and add whatever fillings you would like to the recipe.
Oh, and did I mention this makes an soft and chewy chocolate cookie?

Before I place the cookies into the oven I placed a square chocolate bar piece on each cookie as well as used pieces of Macintosh toffee on some. Feel free to play with the toppings you like.

Almond Butter Chocolate Rice Pudding

Almond Butter Chocolate Rice Pudding

Ingredients
  

  • 2 cups cooked and cooled leftover rice
  • 3 cups milk
  • 1/2 cup white sugar
  • 1 tsp vanilla
  • 1/2 tsp ground nutmeg
  • 1 large egg
  • 1/2 cup Almond Butter
  • 3 tbsp good quality dark chocolate cocoa powder

Instructions
 

  • In a medium saucepan on low heat combine the rice, milk, sugar, vanilla and nutmeg.
  • Stir and increase heat to medium for 8-10 minutes stirring often.
  • Turn heat to low.
  • In a small bowl whisk the egg.
  • Add a bit of hot rice mixture to egg and stir.
  • Add a bit more of the hot liquid and stir.
  • Add the warmed egg mixture into the saucepan and whisk well.
  • Increase heat to medium and continue cooking for 5 minutes.
  • Turn heat to low and simmer for 10 minutes.
  • Add the cocoa powder to the hot rice mixture and stir well.
  • Continue cooking on low heat for another 10 minutes.
  • Add the almond butter and stir well.
  • Turn off heat.
  • Serve pudding warm but I also liked it cold with a bit of fresh whipping cream poured over top.
  • Enjoy!

Gluten Free Almond Butter Crunch

Ingredients
  

  • 1 1/4 cups brown sugar
  • 1 tbsp white corn syrup
  • 3 tbsp water
  • 1 cup butter
  • 1/2 cup gluten free dark or milk chocolate chips
  • 1 cup finely chopped almonds

Instructions
 

  • Line a cookie sheet with parchment paper.
  • In a large heavy saucepan add the brown sugar, corn syrup, water and butter.
  • Heat on medium and stir.
  • Place a candy thermometer into saucepan.
  • Increase heat to medium-high and cook until mixture reaches 150 degrees C or 310 degrees F.
  • Remove from heat and add chopped almonds.
  • Stir.
  • Pour mixture onto cookie sheet.
  • Sprinkle the chocolate chips over the hot candy.
  • Chocolate chips will melt quickly and smooth out with a spoon.
  • Place cookie sheet into refrigerator to cool.
  • Once cooled, break into pieces.
  • Enjoy!

Gluten-Free Paleo Asian Almond Chicken Salad

My husband and I had a fabulous vacation when we went to the Hawaiian Islands. We stayed at the Halekulani Hotel, amongst some of the top hotels in Honolulu, right in Waikiki. It has evolved into a resort that has won tons of accolades. There is a beautiful pool with a Cattleya Lily mosaic design on the bottom. A pristine stretch of beach just steps away!
There are several boutiques and restaurants where you can have everything from just afternoon tea to drinks for a cocktail hour. The most amazing lunch we had was at Orchids, a casual yet elegant oceanfront restaurant. Not only is the view spectacular, the place is simply brimming with beautiful tropical orchids in bright colors.
We both decided to order the Asian almond chicken salad along with a carafe of an excellent white wine. The flavors mingled to provide a most unique dining experience. In fact, I couldn’t wait (well, almost) to try and recreate this dish for friends back home on the east coast.
I was delighted to find this recipe online for an Asian almond chicken salad recipe from Nom Nom Paleo that rivaled the one we had at Orchids on Waikiki Beach.

Asian Almond Chicken Salad

Ingredients
  

  • 3 tbsp creamy almond butter
  • 2 tbsp Red Boat fish sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp coconut vinegar
  • 2 tbsp unsweetened applesauce
  • 1/2 tsp crushed red pepper
  • 3 cup shredded cooked chicken
  • 3 medium carrots, peeled and julienned
  • 8 small kohlrabi roots, peeled and sliced (can sub jicama or sliced apples
  • Handful of basil, cut in chiffonade
  • Large head of romaine lettuce, washed and torn into bite-size pieces.
  • Handful of cilantro, roughly chopped.

Instructions
 

  • Combine all the ingredients and the sauce. Use a whisk to combine.
  • Slice the kohlrabi and shredded carrots with a julienne peeler and toss them in a bowl.
  • Add the dressing, the chicken and the herbs.
  • Toss everything once again. Serve on a bed of romaine lettuce.

Scouring the internet like I do sometimes, I came across a coconut bark that has no added sugar in it. I know the health benefits of coconut butter but with the added interest of lowering my intake of sugar I thought I’d give this recipe a try.
This bark doesn’t have a sweetness to it, but the combination of coconut, pecans and almonds lends a heartiness to it. You could add dried cranberries to the bark for a pinch of sweetness.

Ingredients
  

  • 1 1/2 cups coconut butter
  • 2 tbsp coconut oil + 2 tsp for toasting
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1 cup whole pecans, toasted
  • sliced almonds, toasted
  • pinch of Maldon sea salt
  • 1 cup unsweetened large flake coconut

Instructions
 

  • Line a 9×13 cookie sheet with parchment paper.
  • Heat 2 tsp coconut oil in a cast iron pan on medium heat.
  • Then add almonds and pecans.
  • Reduce heat to med-low and toast for 2-3 minutes, stirring to prevent burning.
  • Remove from heat and add a dash of sea salt.
  • Melt coconut butter with coconut oil in a double boiler or in a large bowl over top of a saucepan filled with water.
  • Add extracts, roasted pecans and almonds.
  • Mix well.
  • Pour mixture onto cookie sheet and spread into a thin layer.
  • Press the coconut onto the top.
  • Place the cookie sheet in the fridge for 15 minutes or so. 
  • Remove and slice into squares.
