No waiting for dough to rise or chill with this recipe. This keto flatbread is a terrific “quick” bread option for sandwiches, wraps, pizza crusts or to use to dip into your favourite soups.
What I love about this gluten-free recipe is it isn’t the typical fathead dough. That dough uses shredded cheese, cream cheese and egg to make the flatbread. I have had to cut out dairy from my diet so I developed a recipe with no cheese in it. This gluten-free flatbread is more like a thick tortilla. I love how it holds it shape and stays soft for days. No yeast is needed to make this gluten-free flatbread.

Whether you call them keto flatbreads or keto tortillas, I think you should make this recipe right away. You will be so happy you did.

WHAT INGREDIENTS YOU NEED TO MAKE THE FLATBREADS:
- Gluten-Free Finely Ground Almond Flour
- Coconut Flour
- Golden Flaxseed
- Psyllium Husks
- Gluten-Free Baking Powder
- Vegan Butter
I used a tortilla press to flatten the flatbread dough. I find it is far easier to use a press rather then 2 pieces of parchment and a rolling pin. Using the tortilla press helps to flatten the dough into an even thickness for each one.

This gluten-free and keto flatbread recipe can also be prepared ahead of time and then used throughout the week. A double batch of the recipe works well for doing that. You can definitely use these gluten-free flatbreads as a base for pizzas. Once grilled on the stove, I will add my toppings and pop the flatbread into the oven for 8-10 minutes.

HOW TO MAKE THE FLATBREADS:
- In a medium bowl add the dry ingredients and use a hand mixer to mix.
- Add the cut-up vegan butter and mix on low for a few minutes. This helps to break down the butter a bit before you add the boiling water.
- Add boiling water and beat on high for a few minutes.
- Use a spatula and stir mixture until you get a dough that sticks together.
- Remove and mold into a log shape.
- Cut into 6 equal pieces.
- Get out a tortilla press.
- Place a piece of parchment on bottom of press.
- Add one piece of dough onto the parchment paper.
- Top with another piece of parchment paper.
- Press tortilla closed until you have a thin flatbread.
- Heat up a cast iron pan or a grill pan on the stove.
- Remove flatbread and place on hot grill.
- Cook until flatbread is light brown and flip. Do same on the other side.
- Repeat with other pieces.

- 1/4 cup finely ground almond flour
- 1/4 cup coconut flour
- 1/4 cup ground golden flaxseed
- 2 Tbsp psyllium husks
- 1 tsp gluten-free baking powder
- 3 Tbsp vegan butter cut into small pieces
- 1 cup boiling water
Instructions
- In a medium bowl add the dry ingredients.

- Add the cut-up butter and use mixer to beat. This helps to break down the butter a bit before you add the boiling water.
- Add the boiling water and mix on high for a few minutes.

- Cut into 6 equal pieces.
- Place a piece of parchment on bottom of tortilla press.
- Place a piece of dough on parchment.

- Heat up a cast iron pan or grill pan on stove on medium heat.
- Place flatbread on hot grill pan and cook until flatbread is light brown.
- Flip flatbread and cook other side.
- Repeat with other pieces.
