Keto and Gluten-Free Flatbread
This gluten-free and keto flatbread is soft and flexible and a great low-carb bread option. It is delicious "quick" bread for sandwiches, wraps, pizza crusts or to use to dip into your favourite soups.

Ingredients

cup
finely ground almond flour
1/4
cup
coconut flour
1/4
cup
ground golden flaxseed

psyllium husks

gluten-free baking powder

vegan butter
cut into small pieces

boiling water
Instructions
In a medium bowl add the dry ingredients.
Use a hand mixer to mix the ingredients.
Add the cut-up butter and use mixer to beat. This helps to break down the butter a bit before you add the boiling water.
Add the boiling water and mix on high for a few minutes.
Use a spatula and stir together until you get a dough that sticks together.
Remove the dough onto the counter and mold into a log shape.
Cut into 6 equal pieces.
Place a piece of parchment on bottom of tortilla press.
Place a piece of dough on parchment.
Top with another piece of parchment.
Press tortila down and flatten dough.
Heat up a cast iron pan or grill pan on stove on medium heat.
Place flatbread on hot grill pan and cook until flatbread is light brown.
Flip flatbread and cook other side.
Repeat with other pieces.
