I have been making these no-bake chocolate cookies for years. But now I add peanut butter to the recipe and it makes these cookies so, so good. The perfect no-bake treat that takes less than 10 minutes to make. So easy and oh so tasty!
For this recipe you will want rolled oats. I always use rolled oats that are certified non-contaminated and gluten-free. You could also add unsweetened shredded coconut to the cookie if you want because it adds a bit more chewiness to the cookie. If you do want to add coconut, I would add 1/3 cup at the same time as you add the rolled oats.
HOW TO MAKE THE COOKIES:
- In a medium saucepan add the butter, sugar, milk and cocoa powder and heat on medium heat.
- Whisk well and bring to a boil.
- Boil for 1-2 minutes and then remove from heat.
- Add the peanut butter and stir well.
- Add the rolled oats and stir until batter is thick.
- Use an ice cream scoop to drop batter onto a piece of parchment paper.
- Let cookies cool and harden.
