Add dry ingredients and mix well then fold in dried fruit and bake. That’s it! A very easy recipe which turns into a delicious gluten-free loaf.

HOW TO MAKE THE LOAF:

  1. Preheat oven to 350 degrees.
  2. Line a loaf pan with parchment paper.
  3. In a medium bowl add the softened butter with the brown sugar and mix with a hand mixer.
  4. Add the eggs, oil and applesauce and beat again. Scrap sides of bowl to incorporate all.
  5. In a small bowl add dry ingredients and whisk.
  6. Add dry ingredients and mix on low speed.
  7. Add the buttermilk and mix on low speed. Increase speed to medium and beat until your batter is very smooth.
  8. Fold in the dried fruit and pour batter into lined pan.
  9. Bake for 45-50 minutes.
  10. Remove from oven and cool.

This gluten-free dried fruit loaf tastes amazing with a cup of tea and reminds me of fruit cakes my Grandma used to make. My Grandma was an avid baker and made homemade cinnamon buns, cookie and cakes all the time. In fact, we had a baked goodie for breakfast everyday. A delicious memory for sure. One of many food memories of my dear Grandma. I miss her a lot.

  • Preheat oven to 350 degrees.
  • Line a loaf pan with parchment paper.
  • In a medium bowl cream the butter and brown sugar with hand mixer.
  • Add the eggs, oil and applesauce and beat on low speed until well combined.
  • In a small bowl whisk the gluten free flour blend, baking soda, baking powder and spices.
  • Add the dry ingredients, alternately with the buttermilk and mix on low speed.
  • Increase speed to medium and beat until batter is smooth.
  • Fold in the dried fruits and stir well.
  • Pour the batter into the loaf pan and bake for 45-50 minutes.
  • Remove from oven and let cool.
