The weather here in Calgary has been very dreary. We’ve been waking up to fog every morning, fog so thick I can’t even see the house across the street. And it has been cold, we are sweater weather all over again.
We are used to sunny blue skies here in Calgary even when the ground is covered in snow, so fog and consistent rain doesn’t make us too happy here.

This however is a great time to turn the furnace up, light a fire, put on your favorite sweater and adding warm smells of spice and vanilla in the kitchen. My house has had a lot of company lately. No friends, family or extended relatives.
Usually during the day I’m alone. The hubby goes to work, and my youngest son goes off to university. However, he just finished his exams and his summer job has yet to start. The hubby has been taking a few days off here and there to work on house projects and getting his mustang ready for car shows. So I’ve enjoyed the busyness of the house and one of my favorite things to do for my family is to make a large breakfast. I usually do the traditional bacon and eggs but with this gloomy weather I felt like making some yummy waffles.
You’ll notice I have a few recipes for gluten free waffles and pancakes on my blog.

There’s something about pancakes and waffles that makes me feel like a warm blanket is on my shoulders, like I’m getting a hug from my grandma, like I’m making pancakes again for my little kids. I just like pancakes and waffles! Can’t you tell? ????
So, how do you switch up waffles and make them more interesting? You add innovative ingredients and toppings! Like peanut butter and jam! Now imagine a warm waffle topped with creamy peanut butter filing and hot strawberry jam on top…. Yep! You want one don’t you?
My recipe for my gluten free buttermilk waffles is already on my blog (link above), but I’ve added ground pecans and some warm strawberry jam to the batter.
Note: before you get started * – To make these PB & J Waffles, make the peanut butter cream first, then waffles and strawberry jam topping.

Gluten Free PB & J Waffles

Ingredients
  

  • 3/4 cup potato starch
  • 1/2 cup brown rice flour
  • 1/4 cup tapioca starch
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/3 tsp xanthan gum
  • 3 eggs
  • 2 tbsp canola oil
  • 1 cup buttermilk

Instructions
 

  • Adding 1/3 cup ground pecans & 1/4 cup strawberry jam(Heated up in microwave for 30 seconds).
  • In a large bowl add all dry ingredients, whisking well to incorporate.
  • Add ground pecans and stir again.
  • Add buttermilk, eggs and oil and whisk, beating until a smooth batter is formed.
  • Once smooth, add in strawberry jam and stir.
  • Let batter rest for 5 minutes.

Peanut Butter Cream

Ingredients
  

  • 1/3 cup smooth peanut butter
  • 3 tbsp white sugar
  • 1/4 cup milk
  • 1 cup whipping cream

Instructions
 

  • In a small saucepan, heating over low-medium heat add peanut butter, sugar and milk.
  • Whisk well.
  • Stirring constantly let mixture cook for a couple of minutes.
  • Your really just heating until mixture is smooth.
  • Remove from heat and let cool for 5-10 minutes
  • Once cooled, whip cream for 5 minutes until peaks form.
  • Fold whipped cream into peanut butter mixture.
  • You’ve now made peanut butter cream.
  • It can be stored in refrigerator until ready to use.

Strawberry Jam Topping

Instructions
 

  • Heat up 1 cup strawberry jam in a microwave for 1 minute.
  • Stir well until jam is smooth.
  • Serve warm when waffles are ready.
  • To assemble waffles
  • Spread a little bit of warm strawberry jam on plate.
  • Place a hot waffle on jam.
  • Top hot waffle with peanut butter cream.
  • Place another waffle on top, a little more peanut butter cream and then pour some hot strawberry jam topping over.
  • Enjoy!

Blue Banana Waffles

These gluten-free blue waffles are made with banana flour. It is an easy recipe to make and a fun waffle recipe the kids will love for breakfast.

Blue Banana Waffles

Ingredients
  

  • 3/4 cup green banana flour
  • 3 large eggs
  • 1 1/2 tsp baking powder
  • 1/4 cup white sugar
  • 1 cup buttermilk or add 1 tsp apple cider vinegar to almond milk
  • 1 tsp Butterfly pea powder
  • 1 cup whipping cream
  • 1 tbsp white sugar
  • 1 tsp butterfly pea powder
  • Fresh blueberries

Instructions
 

  • In a medium bowl add all the ingredients and use a hand mixer to blend the batter.
  • Beat the batter until you have a very smooth waffle batter.
  • Let it rest for 5 minutes.
  • While the batter is resting heat up your waffle iron.
  • Spray the waffle iron with Pam.
  • Pour a bit of batter into each waffle.
  • Close the lid and cook the waffle.
  • Remove the waffles from the iron and repeat with remaining batter.
  • In a small bowl beat the whipping cream with the butterfly pea powder until you have peaks.
  • Top each waffle with the blue whipping cream and also fresh blueberries.
  • Enjoy!!

I like to play with new ingredients and recently I was in Homesense and saw a bag of green Banana Flour.

I was intrigued.

The bag said it was gluten free and a delicious alternative to grain flour so I knew I would have to try this new ingredient out in my kitchen.

My immediate thought was to make pancakes or waffles with this new banana flour and I also had just received a box of coloured natural powders from Raw Nice (link to raw nice). I decided to use the Butterfly Pea Powder and make the waffles blue.

What is Butterfly Pea Powder?

It is made from butterfly pea flowers and is used in Ayurvedic medicine for health. It is packed with antioxidants and is a natural energy booster. Plus it is brilliant blue and a natural colorant which I really like.

So, yes, Blue waffles is what I made.

Crispy Cassava Blender Waffle Recipe

Ingredients
  

  • 1 cup Otto’s Cassava Flour
  • 1 tsp Himalayan salt
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 ripe banana
  • 2 organic eggs
  • 1-2 tsp real vanilla extract
  • 2 tbsp organic virgin unrefined coconut oil
  • 1.5 coconut or almond milk

Instructions
 

  • Preheat waffle iron.
  • Take your blender and literally toss ALL the ingredients in.
  • Blend all for about 30sec-1min or until well mixed.
  • Check batter; if it seems too thick still, add a splash more almond/coconut milk or water.
  • You want it thick but still able to pour.
  • Pour onto waffle iron and cook!
  • Remove when crispy and golden brown on the outside.
  • Top with desired ingredients.
  • I made a wild blueberry compote for these; see below for recipe.

Wild Blueberry Compote

Ingredients
  

  • 1 cup frozen organic wild blueberries
  • 1/2 tsp real vanilla extract
  • 1/4 tsp cinnamon
  • 1 tsp extra virgin unrefined coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp Optional: non-GMO soy lecithin powder (to thicken)

Instructions
 

  • In a saucepan on medium heat, gently defrost blueberries.
  • Add remaining ingredients and stir for a couple minutes, until well combined.
  • Let cool a little before pouring atop waffles.

Looking for something special to make on Valentine’s Day? Mother’s Day? Father’s Day? Or really anytime you want to share a warm, chocolate, sweet berry treat with a loved one?
I’m a big breakfast fan. I love Pancakes, Waffles, Omelette’s, Granola, etc. Not just for breakfast! When my kids were younger we used to have “breakfast suppers.” French toast and pancakes were eaten at least once a week after an evening of swimming or hockey. When I was working retail and hadn’t had a chance to prepare supper earlier, I would whip up a cheesey omelette and toast for everyone. In fact, it was a preferred supper than picking up a fast food meal.
Valentine’s Day is fast approaching and I thought a twist on a breakfast supper would be a nice treat. Why not make waffles a bit fancier? Why not include dark chocolate and strawberries: 2 faves for Valentines Day.
I’ve made these gluten free waffles before in the recipe GF Salted Caramel Banana toasted Almond Waffles. However, this time I added 2 more ingredients to the mix, good dark cocoa and gluten free dark chocolate chips.

GF Double Chocolate Chip Waffles

Ingredients
  

  • 1/2 cup brown rice flour
  • 3/4 cup potato starch
  • 1/4 cup tapioca starch
  • 1/4 cup good dark cocoa
  • 1 1/2 tsp good dark cocoa
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/3 tsp xanthan gum
  • 3 eggs
  • 1 cup buttermilk
  • 2 tbsp canola oil
  • 1/2 cup dark chocolate chips (try Enjoy Life brand)

Instructions
 

  • In large bowl combine brown rice flour, potato starch, tapioca starch,cocoa, baking powder, baking soda, salt and xanthan gum. Whisk well.
  • Add eggs, buttermilk and oil to dry ingredients and stir well with a spatula. Beat for a few minutes to make batter smooth.
  • Add chocolate chips to batter.
  • Make waffles according to your waffle maker.
  • This batch of batter made 7 large waffles for me.
  • Strawberry Butter –Puree 1 cup of organic strawberries and add a 1/2 cup of softened butter. Mix together.

Whipped Cream

Ingredients
  

  • 1 cup whipped cream, with 2 tbsp of sugar.
  • 1-2 cup sliced strawberries (+) Gluten Free Saskatoon Syrup

Instructions
 

  • To assemble breakfast: add strawberry butter, sliced strawberries and whipped cream on top of Gluten Free Double Chocolate Chip Waffle. Then pour GF Saskatoon Syrup on top.

With the holidays over, you probably have family and friends still popping by and the kids are still off of school. So you may be looking for a great brunch recipe!
This is a delicious gluten free breakfast that will surely be your new family favorite. Gluten Free Waffles topped with warm salted caramel sauce, bananas and toasted almonds.
Oh ya!
The key to these waffles is using buttermilk. I find the buttermilk gives pancakes and waffles the “lift/air” that gluten free goods tend to not have.
 

Gluten Free Waffles

Ingredients
  

  • 3/4 cup potato starch
  • 1/2 cup brown rice flour
  • 1/4 cup tapioca starch
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/3 tsp xanthan gum
  • 3 xanthan gum
  • 2 tbsp vegetable oil
  • 1 cup buttermilk

Instructions
 

  • Heat up your waffle maker.
  • In a medium bowl add dry ingredients (potato starch, brown rice flour, tapioca starch, baking powder, baking soda, salt and xanthan gum) and combine well.
  • Add wet ingredients to dry and stir well to make a smooth batter.
  • If too thick add a little more buttermilk.
  • Pour small amount of waffle batter to hot waffle maker.

Salted Caramel, Banana and toasted almond topping

Ingredients
  

  • Salted Caramel Sauce (see www.lickmyspoon.com) for a great recipe
  • 2 bananas
  • 1 cup sliced almonds
  • 1/2 cup butter
  • 2-3 tbsp heavy cream

Instructions
 

  • Add 1/4 cup butter and 1 cup almonds to a pan and heat until lightly toasted.
  • Put toasted almonds into a bowl.
  • With same pan,  add 1/4 cup butter and 2 bananas sliced and heat on low for a couple of minutes.
  • Add 1/2 cup of the salted caramel sauce and whipping cream to bananas and simmer until caramel sauce is warm.
  • Top waffle with salted caramel banana sauce, and then top with toasted almonds.
  • This made 4 waffles.
