Gluten-free pretzel nut squares that have a shortbread crust and a gooey filling topped with salty pretzels.

HOW TO MAKE THE PRETZEL SQUARES:

  1. Preheat oven to 350 degrees.
  2. Line a 9 x 13 pan with parchment paper.
  3. In a stand mixer or use a medium bowl with hand mixer, mix the softened butter and brown sugar.
  4. Add the gluten-free flour and mix until crumbly.
  5. Pour into lined pan and lightly pat the crust mixture into pan.
  6. Bake for 15-17 minutes.
  7. Remove from the oven.
  8. In a small saucepan add the butter, maple syrup, corn syrup, brown sugar and vanilla and heat on medium heat.
  9. Stir and let mixture come to a boil.
  10. Once boiling, let cook 2 minutes, stirring frequently.
  11. Sprinkle the nuts, seeds and pretzels over the cooked crust.
  12. Pour the hot liquid all over the bars.
  13. Bake in oven for 15 minutes.
  14. Remove and let cool completely before cutting.
  15. Enjoy!

HINT: Allow these to cool COMPLETELY before slicing. The filling needs time to set up. I find it is easier to slice if I put them in the refrigerator to cool.

  • Preheat oven to 350 degrees.
  • Line a 9 x 13 baking pan with parchment paper.
  • In a stand mixer, or use a hand mixer and medium bowl, mix the softened butter and brown sugar.
  • Add the gluten free flour and mix until crumbly.
  • Put crust into pan and use hand to lightly pat crust mixture onto the bottom of the baking pan.
  • Bake for 15-17 minutes.
  • Remove from oven.
  • In a small saucepan add the butter, maple syrup, corn syrup, brown sugar and vanilla and heat on medium-high heat.
  • Stir and let mixture heat to boiling.
  • Once boiling let cook for 2 minutes, stirring frequently.
  • Sprinkle the nuts and the pretzels over the crust.
  • Pour the hot liquid over the top of the bars.
  • Place baking pan back in the oven and bake for another 15 minutes.
  • Remove and let cool completely before cutting.
  • Enjoy!
