I have seen similar recipes call these squares no bake Sweet Marie Bars. Having never had one I can’t say how similar they are to a Sweet Marie chocolate bar, but I do think they taste like a O Henry bar. Regardless of what they are called, they are a tasty square to make.
What do you get when you melt butter, peanut butter and add rice krispies and peanuts? You get a decadent and delicious no bake crunchy square that tastes like a chocolate bar. They are sweet, crunchy and topped with creamy chocolate, and oh so addictive.

INGREDIENTS NEEDED TO MAKE THE BARS:
- Brown Sugar
- Corn Syrup
- Butter
- Peanut Butter
- Gluten-Free Rice Krispies
- Chopped Peanuts
- Vanilla
- Gluten-Free Chocolate Chips
I always think of these gluten-free no bake O Henry Bars as a summer treat, but they are a perfect snack for lunches, road trips or holiday square.
Everybody loves an easy no bake bar to make when it is too hot to turn on the oven. Using some simple pantry ingredients you can easily make these gluten-free squares for your family today.
HOW TO MAKE THE O HENRY BARS:
- In a microwavable bowl add the brown sugar, corn syrup and butter.
- Microwave on high for a minute and stir. Then return to microwave and on high heat until mixture is melted and bubbly.,
- Add peanut butter and vanilla and mix well.
- In a large bowl add the rice krispies, chopped peanuts and salt and stir.
- Pour hot mixture over krispies and stir well.
- Press into a parchment lined square baking pan.
- Add peanut butter and chocolate chips into a glass bowl.
- Microwave for 30-45 seconds until chocolate is melted. Stir well.
- Pour topping over base and spread all over.
- Place in refrigerator for at least an hour to set.
- Slice and serve.

Equipment

Ingredients
- Base ingredients
- 1/2 cup brown sugar
- 1/2 cup corn syrup
- 1 tbsp butter
- 1/2 cup peanut butter
- 2 cup gluten free rice krispies
- 1 cup chopped peanuts
- 1 tsp vanilla
- Pinch salt
- Topping ingredients
- 1/4 cup peanut butter
- 1/2 cup gluten free chocolate chips
Instructions
- Add brown sugar, corn syrup, and butter into a glass bowl or microwavable bowl.
- Microwave for a minute and stir.
- Microwave again for a couple minutes until melted and bubbly.
- Add peanut butter and vanilla and mix well.
- In a medium bowl add the rice krispies, chopped peanuts and salt and stir.
- Pour melted mixture over krispies and sti well.
- Press into a parchment lined 8 x 8 square pan.
- Melt in microwave the topping ingredients (peanut butter and chocolate chips).
- Spread the topping onto the base.
- Refrigerate for at least an hour.
- Slice and serve.
