These gluten-free lemon poppyseed donuts are super easy to make and oh so delicious and moist. They are the perfect lemon dessert for springtime. There are certain things that are just meant to be together- lemon and poppyseed. The tangy citrus of lemons and the subtle nuttiness of poppyseeds. These gluten-free donuts are moist and hit the perfect tart note without being too sour. The donuts taste great without icing, but I love a good glaze so I adorned the lemon donuts with a bright yellow lemony icing.
This gluten-free donut recipe is so easy to make and I suggest getting the kids to help you make them. Kids love helping in the kitchen and I know they would love making lemon donuts. - Gluten-free flour blend (1 to 1)
- Monkfruit sweetener
- Gluten-free baking powder
- Buttermilk or milk alternative with 1 tsp apple cider vinegar added
- Eggs
- light olive oil
- Juice and zest of a lemon

ARE POPPYSEEDS GOOD FOR YOU?
Poppyseeds are very low in cholesterol and sodium. They contain oleic acid which is a fatty acid that helps lower LDL or bad cholesterol. Like most seeds they are a good source of fibre as well as a good source of B vitamins and folic acid. Poppyseeds contain a good amount of minerals like iron, copper, calcium, potassium and zinc. The poppyseeds can be cold pressed into poppyseed oil which is rich in omega-6 and omega-9 fats. These fats improve overall health and lower the risk of heart disease.
HOW TO MAKE THESE LEMON DONUTS:
- Preheat oven to 400 degrees.
- Grease 2 donut pans.
- In a stand mixer add the eggs, buttermilk, oil, lemon juice and zest and beat on medium speed.
- Add the gluten-free flour, monkfruit sweetener and baking powder an mix on low speed, increasing to medium speed until you have a smooth batter.
- Fill a plastic piping bag 3/4 full with batter and twist closed.
- Cut the bottom of the piping bag about 1/2 inch open.
- Squeeze batter and fill each donut cavity about 3/4 full.
- Bake in oven for 11-13 minutes.
- Remove and cool for 5 minutes and then gently tap the donuts and flip onto a cooling rack.
- Cool completely before icing.
What is more sunshiny than lemon? These gluten-free donuts are incredibly easy to make and have the most amazing lemon flavour. Both fresh lemon juice and zest are used in the recipe. I used donut pan for these donuts and I love it! Make sure to erase the pan well before adding the batter. To fill the donut pan, I used Wilton decorating bags. It makes filling the donut pan so much easier this way. Once done I throw the bags away so less mess to clean up. These gluten-free donuts are baked, not deep-fried but they still taste like a delicious donut. Gluten-free lemon poppyseed donuts are lemony bites of goodness and the perfect springtime and summer treat.

- 1 1/2 cups gluten-free flour blend (1 to 1)
- 1/4 cup monkfruit granular sweetener
- 2 tsp gluten-free baking powder
- 1 cup buttermilk or milk alternative with 1 tsp apple cider vinegar added
- 2 large eggs
- 1/4 cup light olive oil
- 1 lemon, juice and zest
- 1/4 cup poppyseeds
Instructions
- Preheat oven to 400 degrees.
- Grease 2 donut pans.
- In a stand mixer add the eggs, buttermilk, oil, lemon juice and zest and beat on low speed.
- Add the gluten-free flour, sweetener, poppyseeds and baking powder and mix on low speed. Increase speed to medium and mix until you have a smooth batter.
- Fill a piping bag 3/4 full with batter and twist.
- Cut about 1/2 inch on bottom of bag.
- Squeeze batter and fill donut cavities about 3/4 the way.
- Bake in oven for 11-13 minutes.
- Remove and cool for 5 minutes. Gently tap donuts and flip them onto a cooling rack.
- Cool completely before icing them.
