WHAT YOU NEED TO MAKE THESE MINI BUNDT CAKES:

These blood orange mini bundt cakes are made from scratch using simple ingredients. I used fresh blood orange juice and zest in the recipe. If for some reason you cannot find blood oranges, you can use grapefruit or navel oranges. The icing colour will not be the same if you use other citrus fruits. Blood oranges are milder in citrus flavour, but with a hint of raspberry. The colour makes everything a beautiful pink colour.

For zesting citrus:

I use a fine microplane zester that I bought years ago at Williams Sonoma, but I found a similar one on Amazon.

HERE IS HOW TO MAKE THESE CAKES:

  1. Preheat oven to 350 degrees.
  2. Grease a 6 mini bundt cake pan well.
  3. In a stand mixer add the softened butter and sugar and mix well.
  4. Add the eggs and beat on high speed until smooth. Scraping sides of bowl to incorporate all.
  5. Add the juice and zest from blood oranges as well as the vanilla.
  6. In a small bowl whisk the dry ingredients together.
  7. Add the dry ingredients plus the buttermilk and beat until the batter is smooth.
  8. Pour batter into the greased mini bundt pan and bake for 25 minutes.
  9. Remove and cool before glazing.
  10. To glaze-whisk the glaze ingredients together and pour a small amount over each cake.
