No-bake bar recipes are a handy thing to have at Christmas. All you usually need is a saucepan and a couple of bowls. Well, a fridge is also necessary but I shouldn’t have to list that on the ingredients. Right?
No-bake bars are also needed in the summer months. You do not want to turn on the oven and heat up your house, but you also want dessert.
Well, I want dessert anyhow!
I wanted to share a recipe that was also easy. Not necessarily easy to make, but easy in the ingredients used. Things most people have on hand, or can easily pick up at the grocery store.
As much as I grew up with milk chocolate, since becoming gluten free I use good dark chocolate in most of my recipes. I find that dark chocolate is easier to find gluten free, but it also has the added bonus, normally of being dairy free.
Recipe: No Bake Gluten-Free Rocky Road Bars
1/2 cup butter
2 Tbsp corn syrup
9 ounces of dark chocolate
1 box of Kinnikinnick gluten free graham crackers
2 cups mini marshmallows
1/2 cup sliced almonds
1/4 cup coconut
Line a large 9×9 baking pan with parchment paper.
In a large bowl break up graham crackers into smaller pieces. Add marshmallows, almonds and coconut. Stir with wooden spoon.
Using a double boiler or a metal bowl over a pot of simmering water melt butter, corn syrup and chocolate.
Stir occasionally while everything is melting, then stir well until mixture is smooth.
Remove from heat and pour over dry ingredients.
Stir well and then pour into lined pan.
Smooth the surface, cover with Saran Wrap and cool in refrigerator until firm.
Cut into bars and enjoy!!
