Peanuts. Peanuts. Peanut Butter. Do you have someone in your family that cannot have peanuts? Is your child’s school peanut free?
Thank goodness none of my kids has a peanut allergy so we have always had peanut butter in our house. However in the last 10 years, more and more schools have gone peanut free and with also knowing families who have children with this severe allergy I avoid using peanuts or peanut butter in my baking. At home, no problem. I make peanut butter cookies quite often and peanut butter is a staple on toast in this household.
When I do bake and take it outside of the house I use non-peanut products, such as almond butter and sunflower butter. Also, because I make everything from scratch I am able to tell people exactly what is in the cookies, cakes, or squares. This way I feel better but any allergy issues.
So today I am offering two square recipes that can use peanut butter or not use a peanut product. One I made with peanut butter and one I made with sunflower butter. With school season back in full force thus the need for bake sale items, or school meetings or school lunches these squares are very easy to make but more important are delicious!
Recipe: Gluten Free No Peanut Butter Cup Bars
1 ¾ cup gluten free icing sugar
½ gluten free graham crumbs
1 cup sunflower butter
½ cup melted butter
1 cup gluten free chocolate chips (I used Enjoy Life)
¾ cup sunflower butter
Mix all base ingredients (icing sugar, graham crumbs, sunflower butter, melted butter) in a large bowl. Stir to combine.
Press base ingredients into a parchment lined 9 x 9 square pan.
Melt topping ingredients (chocolate chips and sunflower butter) in a microwavable bowl.
Mix well and pour over base ingredients.
Refrigerate squares for 2 hours and then slice.
I stored my squares in the refrigerator.
Recipe: Gluten Free O Henry Bars
½ cup brown sugar
½ cup corn syrup
1 Tbsp butter
½ cup peanut butter
2 cup gluten free Koala Crisp cereal
1 cup peanuts (I used small organic Spanish peanuts)
1 tsp vanilla
¼ cup peanut butter
½ cup gluten free chocolate chips (I used Enjoy Life)
Mix in a microwavable bowl brown sugar, syrup, and butter. Microwave until melted and bubbly.
Add peanut butter and mix well. Add vanilla.
Stir in koala crisps, peanuts, and a pinch of salt.
Press into a 8 x 8 square pan.
Melt in microwave the topping ingredients (peanut butter and chocolate chips).
Spread the topping onto the base.
Refrigerate for at least an hour.
Slice and serve.
