TIPS FOR BAKING WITH COCONUT FLOUR:
Coconut flour is super absorbent. You will beed to add a larger amount of liquid to your baking if using coconut flour. I like to add more eggs and a bit more oil to the recipe. If comparing coconut flour to regular gluten-free flour it is basically 1/4-1/3 cup coconut flour to 1 cup gluten-free flour blend.
WHAT IS COCONUT FLOUR?
Coconut flour is simple dried coconut meat that has been finely ground up. Coconut flour is high in protein and a great source of fibre. It is also full of healthy fats like MCTS, which is known to reduce your appetite as well as burn more calories.
HOW TO MAKE THE BROWNIES:
- Preheat oven to 350 degrees.
- Line a 8×8 square baking pan with parchment paper.
- In a medium bowl add the oil, butter, vanilla and eggs and beat with a hand mixer on high until smooth.
- Add the coconut flour, cocoa, sugar and coconut and beat on low speed.
- Increase speed to medium and beat until you have a smooth batter.
- Pour batter into lined pan.
- Bake for 25 minutes.
- Remove and top with chocolate chips. Once melted spread the chocolate evenly over the brownies.
- Sprinkle with crushed candy canes.
- Let cool completely before cutting.

- 1/2 crushed gluten-free candy canes
- 1/2-3/4 cup mint chocolate chips
