WHAT INGREDIENTS YOU NEED TO MAKE THIS BREAD:
- Softened Butter
- Swerve sweetener
- Eggs
- Vanilla
- Baking Soda
- Gluten-Free Baking Powder
- Gluten-Free Flour Blend
- Buttermilk
- Granny Smith Apple
- Raw Walnuts
HOW TO MAKE THIS APPLE BREAD:
- Preheat oven to 350 degrees
- Line a loaf pan with parchment paper.
- In a stand mixer add the butter and Swerve sweetener and mix. If you do not have a stand mixer, use a hand mixer and a medium bowl instead.
- Add the eggs and vanilla and mix on low speed. Use a spatula to scrape sides of bowl and mix again.
- Add the gluten-free flour, baking soda and baking powder and mix on low speed.
- Add the buttermilk and mix on low speed, increasing to medium until you have a smooth batter.
- Stir in the chopped apples and walnuts.
- Pour mixture into lined pan.
- Add thinly sliced apples onto of the batter.
- Place in oven and bake for 55 minutes.
- Remove and cool.

This gluten-free apple bread is super quick and easy to throw together. It is moist, delicious and loaded with apple bits. Pick yourself up some granny smith apples and do some baking today. I used buttermilk in the recipe, but you could easily swap coconut milk with 1/2 Tbsp apple cider vinegar instead. I also used Swerve sweetener in the recipe for I like to cut down the sugar in my baking, but you could just use white sugar if you want.

- 1/2 cup softened butter or vegan butter
- 1/4 cup Swerve sweetener
- 2 large eggs
- 1 tsp good quality vanilla
- 1/2 tsp baking soda
- 1 tsp gluten-free baking powder
- 2 cups gluten-free flour blend
- 1- 1 1/3 cup buttermilk or use coconut milk with 1 Tbsp apple cider vinegar added
- 1 cup finely chopped granny smith apple
- 1/3 cup finely chopped raw walnuts
- 1 granny smith apple, very finely sliced
Instructions
- Preheat oven to 350 degrees.
- Line a loaf pan with parchment paper.
- In a stand mixer add the butter and Swerve sweetener and mix.
- Add the eggs and vanilla and mix on low speed. Use a spatula to scrape sides of bowl and mix again.
- Add the gluten-free flour, baking soda and baking powder and mix on low speed.
- Add the buttermilk and mix on low speed, increasing speed to medium and beating until you have a smooth batter.
- Stir in the chopped apples and walnuts.
- Pour batter into lined loaf pan.
- Bake in oven for 55 minutes.
- Remove and cool.
