I am a big salad eater and this gluten-free summer salad is a favourite of mine. Watermelon is one of my favourite summer fruits and I love it plain, with a sprinkle of Tajin spice on, or in this salad. It is so good!

HOW TO MAKE THIS WATERMELON SALAD:

  1. Lightly peel the mini cucumbers.
  2. Cut the cucumbers into squares. Trim the corners to make the cucumbers more into a square shape.
  3. Cut the watermelon into square shapes about the same size as the cucumbers.
  4. Alternate the watermelon and cucumber on a plate.
  5. Crumble the feta and sprinkle over.
  6. Cut up the mint and sprinkle over the watermelon.
  7. Squeeze the juice a lime over the watermelon.
  8. Drizzle a bit of honey over all.
  9. Optional, Sprinkle a bit of Tajin spice over the salad.

Ingredients
  

  • 3 cups watermelon, cut into squares
  • 4-5 mini cucumbers, sliced into squares
  • 1/3-1/2 cup feta cheese, crumbled (cow, sheet or goat feta)
  • 1/4 cup fresh mint, finely chopped
  • 1 lime
  • 2 tsp honey

Instructions
 

  • Lightly peel the mini cucumbers.
  • Cut the cucumbers into squares. Trim corners so that cucumbers are more a square shape.
  • Cut the watermelon into squares about the size of the cucumbers.
  • Arrange the watermelon and cucumbers on a plate. I like to alternate them.
  • Crumble the feta and sprinkle over the watermelon and cucumbers.
  • Finely chop the mint and sprinkle over the salad.
  • Squeeze the juice of the lime over the salad.
  • Drizzle the honey over the salad.
  • Optional. Sprinkle Tajin spice over the salad

Turn ripe cantaloupe into a healthy and delicious gluten-free summer salad. Cantaloupe balls are plated with cucumber balls, fresh mint, tangy feta cheese and a squeeze of fresh lime.

This salad does not need a dressing-just a drizzle of olive oil with the fresh lime juice is all that is needed. Sometimes, simple is the best!

I originally posted this recipe on the blog on Sept 2016. It was fun to take new photos ad this time I cut the cantaloupe and cucumbers into balls. I then placed it on the plate in a Tetris type style. Plating the cantaloupe and cucumber salad this way definitely gives it a bit of a wow factor, especially when entertaining. But you could easily just toss all the ingredients into bowl and serve it that way.

HOW TO MAKE THE SALAD:

  1. Use a melon baller to scoop balls out of the cantaloupe.
  2. Set balls aside.
  3. Lightly peel mini cucumbers.
  4. Cut cucumbers into squares the size of the balls. Trim corners of square cucumbers to resemble a ball shape.
  5. Set cucumbers aside.
  6. In a small bowl whisk the olive oil and lime juice together,
  7. Chop the fresh mint and slice thinly the Thai red chili pepper and set aside.
  8. Chop up 1/2 container of feta into crumbles. Set aside.
  9. To assemble. On a plate alternate the cantaloupe balls with the cucumbers.
  10. Sprinkle fresh mint, feta and chilies on top.
  11. Drizzle lime juice and oil on top.
  12. Sprinkle a bit of salt over all.

  • 1/2 Cantaloupe, cored
  • 5-6 mini cucumbers
  • 1/2 cup crumbled feta cheese, cow, goat or sheep
  • 1 lime, juice
  • 1/2 Tbsp olive oil
  • 1/4- 1/3 cup finely chopped fresh mint
  • Maldon sea salt
  • 1 tsp finely chopped red chile pepper Optional

Instructions
 

  • Use a melon baller to scoop balls out of cantaloupe. Set aside balls.
  • Lightly peel the cucumbers.
  • Cut cucumbers into square shapes the size of the melon balls.
  • Trim the corners of the cucumber squares to make them more ball shape. Set aside.
  • Slice the chili pepper into very thin slices.
  • Alternate melon balls and cucumber on a plate.
  • Whisk the lime juice and olive oil together.
  • Sprinkle the fresh mint, feta and chili slices over the melons and cucumbers.
  • Drizzle the lime juice/oil over the mixture.
  • Serve right away or chill in refrigerator for an hour.

Gluten Free Dairy Free Fruit Pizza

Here is the 3rd of 4 new easy recipes I promised you. I have already shared recipes for gluten free dairy free carrot cake as well as gluten free dairy free brownies.
Today’s recipe is for Gluten Free Fruit Pizza. Have you ever had a fruit pizza? It seemed when I had been playing with the recipe that either you grew up eating fruit pizza like myself, or you had never heard of it.
Fruit pizza was a summer dessert I had as a kid, but it was also a dessert I made for my own kids.

Truly, I have not had fruit pizza since my diagnosis of Celiacs over 7 years ago. Silly really, that I have not tried to make a gluten free version. Maybe I needed to become a better gluten free baker to be able to come up with a recipe.#

Not only is this recipe gluten free, I decided to make a dairy free version too. What surprised me, as well as the folks who got to sample my first couple of fruit pizzas, is that no one could tell that it was dairy free. To me, that is a great feeling of accomplishment as a recipe developer.
I love to hear comments such as: “I didn’t know it was gluten free.” “Really, there is no dairy in here?”
There are 2 parts to this recipe:

  1. The gluten free pizza crust is a sweet cookie dough that you can bake the day ahead.
  2. The creamy dairy free filling that you spread over the pizza crust and then top with an assortment of fresh fruit.

I find it easiest to bake the pizza crust on a simple aluminum foil pizza pan, found at the grocery store.

Gluten Free Dairy Free Fruit Pizza

Ingredients
  

  • 1 1/4 cup Sobeys gluten free flour blend
  • 1/2 tsp baking powder
  • 3/4 cup brown sugar
  • pinch of salt
  • 1/2 tbsp cornstarch
  • 8 tbsp softened Earth Balance vegan butter
  • 1 large egg
  • 1 tsp vanilla
  • 2 containers Tofutti dairy free cream cheese
  • 1/4 cup white sugar
  • 1/2 tsp vanilla
  • 1 cup pineapple juice
  • 1 tbsp cornstarch
  • 4 cups assorted fresh fruit (sliced strawberries, blueberries, raspberries)

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray pizza pan with coconut oil.
  • In a stand mixer cream the butter.
  • Add the brown sugar and beat until light and fluffy.
  • Add in the egg and vanilla and beat on medium for a few minutes.
  • In a small bowl whisk the gluten free flour, baking powder, cornstarch and salt.
  • Add the dry ingredients to the wet and mix on medium speed until combined.
  • Cover and chill dough for abut 30 minutes.
  • Press the dough into the pizza pan.
  • I dust my hands with gluten free flour to make pressing the dough easier.
  • Bake for 20-22 minutes.
  • Remove from oven and let cool completely.
  • I bake my pizza the day ahead and find that easier.
  • In a small saucepan whisk 1/4 cup of the pineapple juice and the cornstarch.
  • Turn heat to medium/high and add rest of the juice.
  • Stir until mixture is thickened.
  • Let cool.
  • Beat dairy free cream cheese, sugar and vanilla until filling is smooth.
  • Spread onto gluten free pizza crust.
  • Top with fruit.
  • Spoon the cooled pineapple glaze over the fruit. You will only use about 1/2 of the glaze
  • Place pizza in refrigerator until ready to serve.
  • I served this fruit pizza to company a few weeks ago and little Rosie loved it!
  • You can also bake this fruit pizza in a rectangle foil pan, one that comes with a lid.

It’s day 33 of our Summer house renovation, as well as the moving out of our youngest. I’ve discovered quite a few things in the last couple of weeks. When our son moved out I fell apart, quite literally!
I knew he had planned on moving out in September but when we were informed it was happening a lot quicker I thought I could handle it. I was wrong!
I couldn’t stop crying. Just the mere thought of him moving, or the sound of his packing sent tears flowing down my face. I know as a parent that kids are supposed to move out and spread their own wings. I know I should be very proud that we raised kids to be self sufficient, industrious, and smart.
Shouldn’t I have been ready for this? Well, by my reaction I can easily say that I was not. The feeling of loss, of taking care of my last child, was overwhelming. The loss of my identity as a Mom and transition in to this unknown phase of my life.
I was feeling lost.
The day he moved out, I basically hid in my bedroom. I just couldn’t see him load up his belongings. I didn’t want to ruin his excitement about getting his own apartment so I felt that it was best to grieve in private.
I’m doing much better now and I’m working through being an empty-nester. I’ve also this week, and it happened on day 30 of renos, been desperately missing my kitchen. In fact missing my kitchen has been tied in to my loss of identity.You see, all I’ve ever wanted was to be a mom and a homemaker. I loved being home with my three kids and even though we had trying times, as all parents do, I’ve enjoyed the journey.
So, this not having a kitchen has left me feeling lost also. I use to spend a lot of time in the kitchen, so with the unaccessability to the one part of the home I feel the most fulfillment from, alongside the loss of the identity I tied myself to as a mother, has caused me some strife in the past few weeks.
However, I was able to find some joy with my latest trip to the farmers market.  I love going to the farmers market. It was strawberries everywhere, blueberries, and freshly picked cherries.

 
Monday’s salad is a Roasted Strawberry Goat Cheese Salad. Most of us have had a strawberry goat cheese salad, but I thought roasting the strawberries would bring out even more of the sweetness- I was right.
I also made a strawberry poppyseed dressing in my Vitamix thus giving this salad another layer of strawberry goodness.

Roasted Strawberry Goat Cheese Salad

Ingredients
  

  • 4 XL strawberries/person
  • 1 tbsp Golden Bliss balsamic vinegar with honey/strawberry skewer
  • 1 cup of raw pecans
  • 1/2 cup plain goat cheese, or 1 small log(crumbled)
  • 1 container (142 g) baby spinach/spring mix
  • 1 wooden skewer/person
  • Strawberry poppyseed dressing *

Instructions
 

  • Soak wooden skewers in water for 30 minutes.
  • Trim off stem of strawberries and skewer 4 strawberries onto each skewer.
  • Pour 1 Tbsp of Golden Bliss balsamic/honey vinegar over each strawberry skewer.
  • BBQ strawberry skewers on medium heat for 1 minute/side.
  • Remove from heat.
  • Place pecans in a small aluminum pie plate and toast lightly on BBQ. 
  • *Remember to shake or stir the pecans so the bottom layer doesn’t burn.
  • Pecans should take approximately 5 minutes to toast.
  • Remove pecans from heat.
  • In a large glass bowl, mix spinach/spring mix, crumbled goat cheese and toasted pecans.
  • Toss lightly.
  • On individual plates, place a mound of the salad mixture.
  • Place a strawberry skewer on each salad mound.
  • Drizzle the Strawberry Poppyseed Dressing on each salad.

Roasted Strawberry Goat Cheese Salad

Strawberry poppyseed Dressing*

Ingredients
  

  • 1/4 cup apple cider vinegar
  • 1/2 tsp ground mustard
  • 1/2 cup grapeseed oil
  • 2 Truvia packets
  • 1 tsp poppyseeds
  • 1 cup sliced strawberries

Instructions
 

  • Add all ingredients into Vitamix.
  • Start on low and turn to high until dressing is smooth.
  • Pour dressing into a glass jar.
  • Store in refrigerator until ready to use.
