Ahh the cupcake.
There seems to be 3 different types of cupcake eaters.
The ones who eat the icing first.
The ones who eat the bottom of the cupcake first and save the icing for last and the ones that take a bite out of the bottom and top no matter how much icing is piled on.
Which are you?
I will share a secret with you all.
I like my cupcakes cold. I like to put mine in the refrigerator and enjoy it after it has cooled for a bit. Maybe because the butter used in most icings firms up and I can taste the cold butter more, really I am not sure why.
It is just the way it is.
Even though my kids are all grown and I no longer make cupcakes for kids birthday parties I still like to bake cupcakes at times. Especially if I know I am getting company and know we will share one or more pots of tea, cupcakes can be a fun item to share with company.

Gluten Free Strawberry Cupcakes

Ingredients
  

  • 1/2 cup butter (softened) or use Earth Balance vegan “butter (softened)
  • 3/4 cup white sugar
  • 2 large eggs
  • 1 cup strawberry jam
  • 1 cup buttermilk or use 1 cup goat milk with 1 Tbsp apple cider vinegar added
  • 1 tsp good quality vanilla
  • 2 cups gluten free flour blend (I like to use Compliments gluten free flour blend available at Sobeys and Safeway)
  • 1 tsp baking soda
  • 1 tsp gluten free baking powder
  • 1 tsp salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 12 cup muffin pan with paper liners.
  • In a stand mixer add the butter (regular or vegan) and the white sugar and beat.
  • Scrap sides of bowl and beat again.
  • Add the eggs and jam and beat again.
  • Scrape sides of bowl.In a small bowl whisk the gluten free flour, salt, baking soda and baking powder.
  • Alternately add the buttermilk (or sour goat milk) with the gluten free flour blend.
  • Mix on medium speed until batter is smooth.
  • Divide batter evenly into the muffin liners.
  • Bake in oven for 18-20 minutes.
  • Remove and cool.

Optional Strawberry Icing

Ingredients
  

  • 1 1/2 blocks of cream cheese (or use 1 1/2 containers of vegan cream cheese
  • 2 tbsp softened butter (or Earth Balance vegan “butter”
  • 1 1/2 – 2 cups icing sugar
  • Start with 2 Tbsp milk (or goats milk) until you get the desired thickness for the icing.
  • I like mine a bit thicker for piping.
  • 1/4 cup strawberry jam

Instructions
 

  • Add cream cheese and butter to stand mixer and beat until smooth.
  • Add strawberry jam and mix again.
  • Add icing sugar and mix on low first then increase to medium.
  • If needed add a bit of milk to thin the icing.
  • Enjoy!

Strawberry Goat Cheese Cracker Appetizer

Looking for a quick and easy appetizer that you can serve on a cracker?
I am a big fan of Presidents Choice gluten free crispbread found at Superstore grocery stores.
They are a nice crispbread that does not fall apart very easily and is a great cracker to apply toppings and serve when entertaining.
I always keep a box of these crackers around for appetizers and antipasto platters
plus they can serve as a toast substitute too.
This recipe takes just minutes to make and that is something I like when entertaining
or when company shows up with little notice.
I am also a fan of the combo of strawberries and balsamic vinegar and hope you give this recipe a try and let me know what you think of it.
The holidays are almost here and this combination on a cracker will delight your
guests when they are in your home.

Strawberry Goat Cheese Cracker Appetizer

This makes enough for at least 8 crackers.

Ingredients
  

  • 1 cup strawberries, sliced
  • 1 tbsp balsamic vinegar
  • 1 tbsp finely chopped basil
  • plain goat cheese
  • Presidents Choice gluten free Quinoa & Honey Crispbread
  • Maldon sea salt
  • Freshly ground pepper

Instructions
 

  • In a small bowl add the strawberries, balsamic vinegar and chopped basil.
  • Stir lightly.
  • Spread goat cheese on the crispbread crackers.
  • Top goat cheese with the strawberry mixture.
  • Sprinkle a bit more of finely chopped basil, sea salt and pepper on each cracker.

Looking for something special to make on Valentine’s Day? Mother’s Day? Father’s Day? Or really anytime you want to share a warm, chocolate, sweet berry treat with a loved one?
I’m a big breakfast fan. I love Pancakes, Waffles, Omelette’s, Granola, etc. Not just for breakfast! When my kids were younger we used to have “breakfast suppers.” French toast and pancakes were eaten at least once a week after an evening of swimming or hockey. When I was working retail and hadn’t had a chance to prepare supper earlier, I would whip up a cheesey omelette and toast for everyone. In fact, it was a preferred supper than picking up a fast food meal.
Valentine’s Day is fast approaching and I thought a twist on a breakfast supper would be a nice treat. Why not make waffles a bit fancier? Why not include dark chocolate and strawberries: 2 faves for Valentines Day.
I’ve made these gluten free waffles before in the recipe GF Salted Caramel Banana toasted Almond Waffles. However, this time I added 2 more ingredients to the mix, good dark cocoa and gluten free dark chocolate chips.

GF Double Chocolate Chip Waffles

Ingredients
  

  • 1/2 cup brown rice flour
  • 3/4 cup potato starch
  • 1/4 cup tapioca starch
  • 1/4 cup good dark cocoa
  • 1 1/2 tsp good dark cocoa
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/3 tsp xanthan gum
  • 3 eggs
  • 1 cup buttermilk
  • 2 tbsp canola oil
  • 1/2 cup dark chocolate chips (try Enjoy Life brand)

Instructions
 

  • In large bowl combine brown rice flour, potato starch, tapioca starch,cocoa, baking powder, baking soda, salt and xanthan gum. Whisk well.
  • Add eggs, buttermilk and oil to dry ingredients and stir well with a spatula. Beat for a few minutes to make batter smooth.
  • Add chocolate chips to batter.
  • Make waffles according to your waffle maker.
  • This batch of batter made 7 large waffles for me.
  • Strawberry Butter –Puree 1 cup of organic strawberries and add a 1/2 cup of softened butter. Mix together.

Whipped Cream

Ingredients
  

  • 1 cup whipped cream, with 2 tbsp of sugar.
  • 1-2 cup sliced strawberries (+) Gluten Free Saskatoon Syrup

Instructions
 

  • To assemble breakfast: add strawberry butter, sliced strawberries and whipped cream on top of Gluten Free Double Chocolate Chip Waffle. Then pour GF Saskatoon Syrup on top.
