Gluten-Free Burger with Caramelized Onions



This Burger Friday is a sweet, creamy, spicy and savory burger. I loved how all the flavors came together. Think spicy mayo, burger, hot sauce, goat cheese, and caramelized onions. All that in a gluten free bun, plus a creamy coleslaw on the side. What could be more summertime than this?
This burger may seem like a lot of work once you are done making all the sauces for it, but realize you can use them for other burgers. You will be making homemade ketchup for the spicy mayo. You will be making caramelized onions that you stirred slowly for 20 minutes. You will be making creamy coleslaw as a side. Yes, all this takes sometime, but I will guarantee it is worth it once you take your first bite.

Homemade Ketchup

Ingredients
  

  • 1 can chopped tomatoes (28 oz)
  • 1 can tomato paste (small)
  • 1 large onion chopped
  • 1 cup red vinegar
  • 1/2 cup sugar
  • 1/2 cup olive oil
  • 2 heaping tsp nutmeg
  • 1/8 tsp allspice
  • 2 bay leaves
  • Salt and pepper

Instructions
 

  • Pour everything into a saucepot and bring to a simmer over medium heat.
  • Continue cooking until the mixture reduces by half, about 45 minutes.
  • Puree until smooth with an immersion blender or food processor.

Spicy Mayo

Ingredients
  

  • 1 cup mayonnaise
  • 1 1/2 tbsp homemade ketchup
  • 1 1/2 tbsp Sriracha

Instructions
 

  • Mix everything together.
  • Store in fridge.

Caramelized Onions

Ingredients
  

  • 2 onions sliced
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 tsp white sugar

Instructions
 

  • In a skillet, melt butter and olive oil over med high heat.
  • Add onions and cook, stirring constantly until onions begin to soften (about 5 minutes).
  • Stir in sugar and cook, stirring frequently, until onions are golden brown (about 20 minutes).
  • It is important not to walk away while they are cooking for you do not want burnt onions.
  • Be patient.

Creamy Coleslaw

Ingredients
  

  • 1 bag cabbage/carrot slaw
  • 2 tbsp apple cider vinegar
  • 2 tsp white sugar
  • 1/3 cup mayonnaise
  • 1/4 cup canola or grapeseed oil
  • Salt and pepper
  • 5-6 drops hot sauce

Instructions
 

  • In a large bowl, whisk together the vinegar and sugar until sugar dissolves.
  • Whisk in the mayonnaise and oil, add salt, pepper and hot sauce.
  • Add cabbage mix and stir.

Caramelized Burger Combo

Ingredients
  

  • Lean ground sirloin
  • Hot sauce
  • Plain goat cheese
  • Caramelized onions
  • Spicy mayo
  • Gluten free hamburger bun

Instructions
 

  • Barbeque hamburgers, once finished top with hot sauce and then a large chunk of goat cheese and let melt for a few minutes.
  • Remove from barbeque.
  • Top hamburger bun with spicy mayo.
  • Top hamburger bun with bbq burger topped with goat cheese.
  • Top the cheese with the caramelized onions and then the top of the bun.
  • Serve with creamy coleslaw. Enjoy!

Homemade Gluten Free Bread



Here is a recipe for gluten free bread. I was able to make this bread using my bread machine, which meant eating homemade bread in a relative short period of time.
This bread had a crispy crust and was light and soft. Again, not something you get from the frozen loafs of bread you buy in the grocery store.
The key to making a good gluten free loaf of bread in a bread machine is to mix all the ingredients in a kitchen aid mixer first. Gluten free flours need a lot of mixing to incorporate them, and bread machines do not have enough power to do that.
This recipe is not my own but was handed to me by a customer at work. No name was attached so I take no credit for the recipe, but also am not able to give credit to the original author.




Homemade Gluten Free Bread

Ingredients
  

  • 1 cup tapioca starch
  • 2 tbsp tapioca starch
  • 3/4 cup brown rice flour
  • 3/4 cup potato starch
  • 2 tsp xanthan gum
  • 3/4 tsp salt
  • 1 tbsp sugar
  • 2 tsp instant yeast
  • 1 egg
  • 1 egg white
  • 3/4 tsp cider vinegar
  • 1 1/2 tsp canola oil
  • 1 1/3 cup milk(warmed)

Instructions
 

  • Measure and mix dry ingredients.
  • Beat eggs.
  • Add them, along with milk, oil and vinegar to dry ingredients.
  • Mix thoroughly in a stand mixer to fully incorporate all ingredients.
  • Add dough to bread machine.
  • Set bread machine to gluten free setting, 1 ½ lb loaf size and dark crust.
  • Let bread cool on its side before cutting.
  • Enjoy!
