After posting a healthy salad recipe I had to share a decadent holiday dessert.

This is a recipe for a 3 layer brownie.

First layer is a baked chocolate brownie then topped with marshmallow creme and then finally a crunchy chocolate/ peanut butter layer.

Sound good, right?

I was going through old family recipes and found this recipe called Crunch Brownies.
It had no name on it so I have no idea who wrote the original recipe but I did change quite a few things to make it gluten free.

Give the recipe a try and please let me know what you think. I am sure you will love it!!
While I used butter in this recipe you could easily use Earth Balance vegan butter and the recipe would be dairy free too.

Gluten Free Double Coconut Bacon Cookies

gluten free double coconut bacon cookies recipe

So in 2016 I am striving to share more savoury gluten free recipes and not just sweet recipes with you all.
But in saying that and I promise the next couple recipes I share will NOT be a cookie recipe, I am sharing a new gluten free cookie recipe with you all today.
I just have too, I really do!
Why?
Did you not see the name of these cookies?
Double coconut, bacon, pretzel salty bites and chocolate are all in this gluten free drop cookie.
Now are you interested?
First though let me clarify the bacon in this cookie. I used coconut bacon, yep – that does exist and I love it in a cookie. So I guess that makes this bacon cookie actually vegetarian!
I found the coconut bacon at my local London Drugs store and I find they carry a large assortment of gluten free items which I like.
I also used pretzel bites in this recipe which I found at Superstore.

Gluten Free Double Coconut Bacon Cookies

Ingredients

  • 2 1/4 cups Compliments gluten free flour blend (I find this blend at Sobeys and Safeway stores here)

  • 1 tsp good quality vanilla
  • 1 cup non contaminated oats
  • 1/2 cup sliced almonds
  • 1 cup gluten free pretzel bites (I used Presidents Choice brand)
  • 1/2 cup Blue Monkey dark chocolate coconut chips
  • 1/2 cup Everyday Superfoods Canadian Maple “bacon” coconut snack

Instructions

  • Preheat oven to 350 degrees.
  • Line 2 cookies sheets with parchment paper.
  • In a stand mixer beat the vegan “butter” with the white and brown sugar.
  • Add the eggs and vanilla and beat again, scraping sides of bowl as needed.

Gluten Free Double Chocolate Moose Cookies

This is day 7 of my #20daysofcookies campaign to post a new gluten free dairy free recipe each day. Enjoy the other recipes here.

gluten free dairy free double chocolate moose cookies recipe

This cookie has made me laugh a few times already. I recently made these cookies as part as a bake sale I was doing with Calgary Food Bloggers. At the bake sale I had a few folks say “moose?” as in “mousse” cookies?
Here again, I could have called these cookies by another name but to me they are moose cookies! I came up with the recipe after finding a moose cookie cutter at my local grocery store.
