I have been a Caprese Salad fan for many years, after out first trip to Italy. It is all about fresh ingredients there. There is just something about sweet tomatoes, fragrant basil and soft mozzarella cheese together. I love the this salad is simply dressed with a good olive oil and balsamic vinegar. Try using a good quality white balsamic vinegar instead of the traditional dark one.

There is nothing better than a good tomato. They should have good flavour and a touch of sweetness. I love finding different varieties of tomatoes at the market from the baby yellow ones to the bigger heirloom tomatoes. We are lucky in Calgary to have quite a few farmers markets during the week in the summer as well as greenhouses here that supply tomatoes through the winter.
