HOW TO MAKE THE LOAF:

  1. Preheat oven to 350 degrees.
  2. Line a loaf pan with parchment paper.
  3. In a stand mixer add the softened butter and brown sugar and mix on low. Add the oil and beat well. Scrape sides of pan to incorporate all.
  4. In a small bowl whisk the gluten-free flour, baking powder and soda and spices.
  5. Add the eggs and beat well.
  6. Add the dry ingredients and mix on low.
  7. Add the buttermilk and vanilla and mix on low speed. Increase speed to medium and beat until you have a smooth batter.
  8. In a small bowl mix the cinnamon and sugar.
  9. Pour 1/2 the batter into the lined loaf pan.
  10. Sprinkle the cinnamon/sugar mix over the batter.
  11. Add the rest of the batter and smooth out.
  12. Bake in oven for 60-65 minutes.
  13. Remove and cool.

  • Preheat oven to 350 degrees.
  • Line a loaf pan with parchment paper.
  • In a stand mixer beat the butter and the brown sugar.
  • Add the oil and beat until smooth. Using spatula to scrape sides of bowl and incorporate all.
  • In a small bowl whisk the gluten free flour, baking powder, baking soda and spices.
  • Add the eggs and mix on low speed. Scraping sides of bowl to incorporate all. Increase speed to medium and beat well.
  • Add the dry ingredients and mix on low.
  • Add the buttermilk and mix on low speed. Increase speed to medium and beat until you have a smooth batter.
  • Pour 1/2 of the batter into the loaf pan.
  • Sprinkle with the cinnamon sugar topping over batter.
  • Add the rest of the batter, smooth out top and bake in the oven for about an hour.
  • Remove and cool.
