The holiday season is here and it’s the perfect time to make these gluten and dairy-free pinwheel cookies. Rich, buttery and chocolatey. This gluten-free pinwheel cookie recipe is an easy Christmas Cookie to make.
It shows so well with its swirls and is a great cookie for a cookie exchange also. Such a classic holiday cookie.
Gluten-free pinwheel cookies are a holiday classic and who can say no to a cookie with chocolate and vanilla swirls? These pinwheel cookies are soft and delicious and are so much fun to make.
A great recipe to make with kids too. This recipe was originally posted in Dec 2014 and I have taken new photos and updated the old blog post. Same tasty cookies with just a fresh look.
INGREDIENTS NEEDED TO MAKE THE COOKIES:
- Butter (Regular or Vegan)
- White Sugar
- Gluten-Free Flour Blend
- Gluten-Free Baking Powder
- Salt
- Good Vanilla
- Egg
- Gluten-Free Cocoa Powder
What is your favourite Christmas Cookie? Truly it is hard for me to pick a favourite. I do love a cookie that is nostalgic and invokes childhood Christmas memories.
A vanilla and chocolate swirl cookie that is light and delicious. Swirl or pinwheel cookies are a fun cookie to make during the holidays. I love the look of a pinwheel cookie. They look fancy, but are actually really quite easy to make.
HOW TO MAKE PINWHEEL COOKIES:
- In a stand mixer beat the softened butter with the sugar until creamy.
- Add the vanilla and egg and beat.
- Scrape sides of pan to incorporate all and beat well.
- Add in the gluten-free flour, salt and baking powder and mix on low speed.
- Increase speed to low/medium and mix until dough comes together.
- Divide dough into 2 parts.
- Place one part into bowl, add cocoa and mix on low speed until blended in.
- Please each dough into a bowl chill in refrigerator for at least an hour.
- Roll each dough on a sheet of parchment paper. Use a bit of extra flour to keep dough from sticking to rolling pin.
- Invert chocolate dough onto the vanilla rolled dough.
- Roll up the cookie dough like a jelly roll.
- Chill while waiting for oven to heat up.
- Preheat oven to 350 degrees.
- Line 2 cookie sheets with parchment paper.
- Remove dough from refrigerator and slice dough about 1/4 inch slices.
- Place slices on cookie sheet allowing for cookies to spread a bit while baking.
- Bake for 11 minutes.
- Remove and cool.

Gluten Free Dairy Free Pinwheel Cookies
Ingredients
- 3/4 cup Earth Balance vegan “butter”, softened
- 3/4 cup white sugar
- 2 cups gluten free flour blend
- 1 tsp gluten free baking powder
- 1/4 tsp salt
- 2 tsp pure vanilla
- 1 large egg
- 1/4 cup gluten-free cocoa powder
Instructions
- In a stand mixer beat the vegan “butter with the sugar until creamy.
- Add the vanilla and egg and beat again.
- Scrape sides of bowl to incorporate all.
- Add in the gluten free flour, salt and baking powder and mix on low speed.
- Increase speed to low/medium and mix well.
- Divide dough into 2 parts.
- Add cocoa powder to one of the parts and add back to stand mixer and mix until well blended in.
- Place each dough into a bowl and chill in refrigerator for at least an hour.
- Roll each dough on a sheet of parchment paper.
- Use a bit of gluten free flour to prevent dough sticking to rolling pin.
- Invert rolled chocolate dough onto the rolled vanilla dough.
- Roll up the cookie dough like a jelly roll.
- Wrap up with saran wrap and place roll in refrigerator while waiting for oven to heat up.
- Preheat oven to 350 degrees.
- Line 2 cookie sheets with parchment paper.
- Remove dough from refrigerator and slice the dough into disks.
- Place disk onto cookie sheets and bake for 11 minutes.
- Remove from oven and cool.
- Enjoy!
