These gluten and dairy-free gingerbread cookies are a fun and festive cookie to make. My gingerbread dough can be used for gingerbread houses and cut-out shapes like trees, gingerbread men and more. I love this time of the year when lights are twinkling, trees are decorated, stockings are hung and the smell of cinnamon fills our houses.

These gluten and dairy-free gingerbread cookies are fun to make and are full of warm spices like cinnamon, ginger and cloves. Festive and perfect for the holidays! This recipe was first published in December 2014. I have taken new photographs of the cookies and rewritten blog post.
This gluten-free gingerbread dough works really well to make gingerbread houses. The dough when baked up holds up really well when cemented with royal icing. Craving gingerbread? Get out a bunch of holiday cookie cutters and make a batch of these cookies. It is fun dough for kids to use too.
INGREDIENTS NEEDED TO MAKE THE COOKIES:
- Vegan butter
- Brown Sugar
- Gluten-Free Baking Powder
- Baking Soda
- Ground Ginger
- Cinnamon
- Cloves
- Egg
- Apple Cider Vinegar
- Gluten-Free Molasses
- Gluten-Free Flour Blend (1 to 1)
There is just something about making your own homemade cookies that makes me happy! Especially during the holiday season. This gluten-free gingerbread cookies recipe will become your new holiday favourite. They are perfectly spiced and lightly drizzled with royal icing.

HOW TO MAKE THE GINGERBREAD COOKIES:
- In a stand mixer or hand mixer and bowl, add the vegan butter and brown sugar.
- Mix on medium speed.
- Add the baking powder, baking soda, spices and salt and mix on low speed.
- Add the egg, molasses and apple cider vinegar and mix on low speed until well combined.
- Scrape sides of bowl to incorporate all.
- Add the gluten-free flour and mix on low speed.
- Increase speed to medium and beat for a couple of minutes.
- Remove dough and place in a small bowl and refrigerate for 3 hours or overnight.
- Preheat oven to 375 degrees.
- Line 2 cookie sheets with parchment paper.
- Lightly flour the countertop with tapioca starch.
- Divide dough in half and use a rolling pin to roll out dough.
- Cut dough with various cookie cutters.
- Place shapes on parchment paper.
- Bake in oven for 9-10 minutes.
- Remove and cool.

Ingredients
- 1/2 cup Earth Balance vegan “butter”, softened
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp salt
- 1 large egg
- 1 tbsp apple cider vinegar
- 1/2 cup gluten free molasses
- 3 cups gluten free flour blend (1 to 1)
Instructions

- Add the baking powder, baking soda, spices and salt and mix in.
- Add the egg, molasses and apple cider vinegar and mix on low speed.
- Scrape sides of bowl and beat mixture well.
- Add the gluten free flour and mix on low speed.
- Increase speed to medium and beat dough really well.
- Place dough in refrigerator for 3 hours or overnight to chill.
- Preheat oven to 375 degrees.
- Line 2 cookie sheets with parchment paper.
- Lightly flour the countertop with gluten free flour.
- Divide dough in half and roll out with a rolling pin.
- Dust dough lightly with gluten free flour before rolling to prevent sticking.
- Cut out dough with various cookie cutters.
- Place on cookie sheet and bake for 9-10 minutes.
- Remove and cool.
- Enjoy!
