Have you heard about socca? It is a naturally gluten-free flatbread that you can eat warm, cut into triangles and dip into soups and stews or as a base for toppings. This easy socca recipe is not only vegan, but also gluten and grain-free. Socca bread is often referred to as a chickpea flatbread and is made with just a handful of ingredients. Chickpea flour, water, oil and zaatar seasoning is all that is needed. You could substitute dried rosemary, oregano or other spices but I am a big fan of zaatar.

Socca can be baked in a pizza oven, or a cast iron frying pan or even on a baking sheet. For this recipe I used a Le Creuset cast iron frying pan. The chickpea flour gives a delightful nutty taste to the flatbread.

With a sprinkle of zaatar and some sea salt this gluten-free socca makes a healthy snack or as I share below, the perfect base to hold a nicoise salad. Socca is a savoury crispy pancake made with simple and clean ingredients.

WHAT YOU NEED TO MAKE THE SOCCA:

Socca or chickpea flatbread is a popular street food in southern France. Locals will enjoy them as is with a glass of cold rose. Socca is also popular in Italy where it is called farinata. Chickpea flatbread can be found in many places around the world.

The beauty of socca is that it takes only 3 ingredients to make it: chickpea flour, water and oil. Chickpea flour is found in many grocery stores as well as health food stores and Indian markets. Gluten-free socca would also make a great gluten-free pizza crust. It is much easier to make socca then a traditional pizza dough.

HOW TO MAKE THE SOCCA:

  1. In a medium bowl whisk the ingredients together until smooth. Let sit for 15 minutes.
  2. Preheat broiler.
  3. Pour 1-2 tsp of oil into a cast iron pan like a Le Creuset.
  4. Place pan in oven for 5 minutes.
  5. Use 2 oven mitts to remove hot pan from oven.
  6. Pour 1/2 the socca batter into the frying pan.
  7. Place pan back in oven and broil for 4-5 minutes.
  8. Remove from oven and use a flipper to remove the socca. Place on a paper towel lined plate.
  9. Repeat with remaining batter.

I used the socca as a base to hold a nicoise salad I had made. Socca is the perfect base for topping with a pile of fresh ingredients like a nicoise salad.

THIS IS HOW I MADE THE NICOISE SALAD:

  • 2 round socca flatbreads
  • 2 cups arugula/spinach blend
  • 1 can tuna drained
  • 1 large tomato, cut into wedges
  • 1/2 cup chopped cucumber
  • 2 hard boiled “jammy” eggs, cut in half
  • Vinaigrette:
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 1 Tbsp finely chopped fresh parsley
  • 1 tsp dijon mustard
  • 1 tsp lemon zest
  • 1/2 tsp dried oregano
  • 1-2 Tbsp finely chopped green onion
  1. Put all vinaigrette ingredients into a small canning jar. Place lid on and shake well.
  2. Top each socca with arugula/spinach.
  3. Divide tuna amongst the both.
  4. Layer the tomato wedges and cucumber and then the egg halves on each socca.
  5. Pour a bit of vinaigrette onto each one.
  6. Enjoy!
