A refreshing spring cocktail with lavender, limoncello and Empress 1908 Gin. This cocktail is named The Duke Royale to honour the life of Prince Philip. As a Canadian who has always loved our English monarchy heritage, I wanted to create a cocktail to toast the Queen’s husband.
This cocktail is simple to make, and OH so refreshing! Add ingredients in a cocktail shaker and shake well. Then strain and pour it over crushed ice. Add some lemonade and a splash of sparkling water and you are all set. I made the keto lavender simple syrup. but you could easily buy the syrup. Recipe for the keto lavender simple syrup will be up on the blog this week.
This lavender and limoncello cocktail is fresh, bright and vitalizing. Truthfully, I only started drinking gin and tonics a few years ago. Good friends of ours introduced me to a G&T with a ton of lime and I was hooked. On a hot summer day I have to remind myself that I am not just drinking sparkling water with lime. A couple tall cold gin & tonics and my cheeks start to flush and go rosy pink.
WHAT YOU NEED TO MAKE THIS GIN COCKTAIL:
- Empress 1908 Gin
- Limoncello
- Keto lavender simple syrup
- Egg white
- Sparkling Water
- Lemonade
- Crushed Ice
- Lemon slices and edible flowers for garnish
Empress 1908 gin is a hand crafted spirit from Victoria Distillers in British Columbia, Canada. It is inspired by the iconic Fairmont Empress Hotel in Victoria, BC. Empress 1908 gin is micro-distilled in small batches using 8 botanicals including rose, cinnamon bark, Fairmont Empress black tea and butterfly pea blossoms. The gin transforms from a vivid indigo blue to a delicate soft pink with the addition of citrus and tonic. Plus it is all natural and gluten-free!

This sparkling lavender and lemon gin is an ideal cocktail to sip outside on a warm evening. The Duke Royale is a gin cocktail that is sophisticated and memorable in its simplicity. Empress 1908 gin changes color depending on what you add to the cocktail. It can turn fuchsia, lavender, blue or pale pink by adding citrus and tonics to it. It is a wonderful gin to use not only for its quality and depth of flavour but the fun fact that with the butterfly pea blossoms in it, it changes color.
HOW TO MAKE THIS COCKTAIL:
- In a cocktail shaker add the gin, limoncello, lavender simple syrup, egg white and ice.
- Shake well for 30-45 seconds.
- In each glass add crushed ice, lemon slice and some blackberries.
- Strain shaker and pour into 2 glasses.
- Top each with lemonade and a splash of sparkling water.
- Add lemon slices and edible flowers to serve.
- Enjoy!

Ingredients
- 4 oz Empress 1908 Gin
- 2 oz limoncello
- 2 oz keto lavender simple syrup
- 1 egg white
- 1/2 cup ice
- 3 oz lemonade
- 1/3 cup sparkling water
- 2/3 cup crushed ice
- 1/2 lemon, cut into slices
- 1/4 cup blackberries
Instructions
- In a cocktail shaker add the gin, limoncello, simple syrup, egg white and ice.
- Shake well for 30-45 seconds.
- In each glass add crushed ice, lemon slice and some blackberries.
- Strain shake and pour into the 2 glasses.
- Top each with lemonade and a splash of sparkling water.
- Add a lemon slice to top of each glass.
