Blue Banana Waffles

Ingredients
  

  • 3/4 cup green banana flour
  • 3 large eggs
  • 1 1/2 tsp baking powder
  • 1/4 cup white sugar
  • 1 cup buttermilk or add 1 tsp apple cider vinegar to almond milk
  • 1 tsp Butterfly pea powder
  • 1 cup whipping cream
  • 1 tbsp white sugar
  • 1 tsp butterfly pea powder
  • Fresh blueberries

Instructions
 

  • In a medium bowl add all the ingredients and use a hand mixer to blend the batter.
  • Beat the batter until you have a very smooth waffle batter.
  • Let it rest for 5 minutes.
  • While the batter is resting heat up your waffle iron.
  • Spray the waffle iron with Pam.
  • Pour a bit of batter into each waffle.
  • Close the lid and cook the waffle.
  • Remove the waffles from the iron and repeat with remaining batter.
  • In a small bowl beat the whipping cream with the butterfly pea powder until you have peaks.
  • Top each waffle with the blue whipping cream and also fresh blueberries.

I like to play with new ingredients and recently I was in Homesense and saw a bag of green Banana Flour.

I was intrigued.

The bag said it was gluten free and a delicious alternative to grain flour so I knew I would have to try this new ingredient out in my kitchen.

My immediate thought was to make pancakes or waffles with this new banana flour and I also had just received a box of coloured natural powders from Raw Nice (link to raw nice). I decided to use the Butterfly Pea Powder and make the waffles blue.

What is Butterfly Pea Powder?

It is made from butterfly pea flowers and is used in Ayurvedic medicine for health. It is packed with antioxidants and is a natural energy booster. Plus it is brilliant blue and a natural colorant which I really like.

So, yes, Blue waffles is what I made.

Are you a fan of chocolate milk?

Did your drink ready made chocolate milk or make it yourself using Nestle Quick?
I remember having both as a kid.

Now my tastes have evolved I say and I prefer really good dark chocolate in my drinks.

I wanted to make a smoothie with chocolate in it and while I was playing with ingredients in the kitchen this recipe I am sharing today, ended up being my favourite.

The recipe is easy to make and uses fairly simple ingredients. I did not add protein powder to this recipe but you could easily add it when you make it yourself.

I used good quality dark cocoa powder in the smoothie plus added a bit of cinnamon to the drink. Cinnamon may help in lowering blood sugar, is high in antioxidant potency and is a natural antimicrobial. It also tastes good!

Chocolate Banana Smoothie

Ingredients
  

  • 1 cup milk
  • 5 pitted dates
  • 1/2 tsp cinnamon
  • 2 tbsp good quality cocoa powder
  • 1 very ripe banana

Instructions
 

  • Add all ingredients to a blender and process until very smooth.

If you are like me you always seem to end up with overly ripened bananas on your counter. Yes, I usually put them in the freezer for future use but sometimes even my freezer seems to have too many unused bananas in it.
That is why I like to have a few banana recipes on my blog for you to look through. This recipe makes enough for a 9 x 13 baking pan and that is especially nice when you have a larger group expected at your house or you need a dessert for that holiday party or pot luck dinner.
This is an easy recipe to make too for it bakes in one pan. You can easily jazz this cake up with a cream cheese frosting and then top it with sugared banana chips and pecans. Does that not sound delicious?

I again used vegan “butter”, goat milk and dairy free cream cheese in this recipe but if dairy is not a problem for you feel free to use the regular butter, milk and cream cheese.
I am a big fan of using goat milk as an alternative to cows milk for when apple cider vinegar is added to it it resembles buttermilk. Buttermilk aids in helping your gluten free baked goods rise and so does the goat milk.

Gluten Free Banana Sheet Cake

Ingredients
  

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 cups gluten free flour blend (I used Compliments gluten free flour blend that is available at Safeway and Sobeys)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup chopped pecans
  • 1/2 cup chopped organic banana chips
  • 3 overly ripened bananas
  • 1/2 cup goat milk
  • 1 tsp apple cider vinegar
  • 1/2 cup Earth Balance vegan “butter”, softened
  • 3 large eggs
  • 1 tsp good vanilla

Tofutti dairy free cream cheese

  • 2 tbsp softened Earth Balance vegan “butter”
  • 1 tsp cinnamon
  • 1 tsp good vanilla
  • 3/4 cup icing sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9 x 13 baking pan with parchment paper.
  • In a small bowl whisk the gluten free flour blend, salt, baking soda and spices together.
  • In a small bowl add apple cider vinegar to the goat milk.
  • Add the eggs and whisk together.
  • In a stand mixer blend the vegan “butter” with the brown and white sugar.
  • Add the bananas and mix until creamy scraping the sides of bowl to incorporate all ingredients.
  • Add the flour mixture, goat milk and vanilla and beat until batter is smooth.
  • Add the chopped pecans and banana chips and mix on low until combined.
  • Pour batter into prepared baking pan.
  • Bake in oven for 30-35 minutes until cake is done.
  • Remove from oven and cool.
  • Top cake with optional frosting.

Frosting

  • In a stand mixer blend the softened vegan “butter” with the cream cheese and vanilla.
  • Add the icing sugar and increase speed to medium.
  • Blend until smooth.
  • Spread frosting on cooled cake and serve.

I was in the kitchen all day long today working on recipes for Amber Approved magazine and for a blogger pasta contest using Catelli gluten free pasta.
I enjoy challenging myself to come up with healthy lunch ideas or a spring time salad using all kinds of citrus fruits.

Playing in the kitchen and coming up with recipes exhilarates me. It fills me with energy to have many cutting boards out, chopping a variety of fruits, veggies and herbs as well as my stand mixer beating a gluten and dairy free dough in the background.
It can look like chaos but in the end four new recipes have been developed and photographed.
While in the midst of this chopping and stirring I thought of pancakes.
Yes, pancakes.
I knew I had a banana in the freezer and decided I would make banana chocolate chip pancakes.
You will be happy I did for I am sharing the new recipe with you.
This recipe is gluten free and dairy free but you can switch to cow milk if you want.

This recipe made about 15 medium pancakes.

These gluten-free and dairy-free banana chocolate chip pancakes are the perfect breakfast for the family. I love to make a big stack of these pancakes on the weekend for brunch.

Gluten Free Dairy Free Banana Chocolate Chip Pancakes

Ingredients
  

  • 1 ripe banana or I like to freeze bananas and then let them unthaw for 5 minutes before using
  • 1 2/3 cup goat milk
  • 1 large egg
  • 1 tbsp sugar
  • 2 tsp gluten free baking powder
  • 1 1/4 cup GF flour blend (I like to use Compliments gluten free flour blend available at Sobeys and Safeway)
  • 1/2 cup Enjoy Life mini chocolate chips

Instructions
 

  • In a large bowl use a stand mixer to beat the banana.
  • Add the egg and sugar and beat until smooth.
  • Add the goat milk and the baking powder and continue beating.
  • Add the gluten free flour and beat until you have a smooth batter.
  • Fold in the chocolate chips.
  • Coat a non stick frying pan with coconut cooking spray and heat pan on low-medium.
  • Pour a dollop of batter on the frying pan and lightly spread out into a circle shape.
  • Cook for about 2-3 minutes and flip pancakes.
  • Cook a couple minutes more.
  • Enjoy!

It always seems that we can have a couple of bananas getting too ripe on the counter. If I do not have an opportunity to use them right away, I place the whole bananas in my freezer. On baking day, I remove 2-3 frozen bananas and let them thaw for 5-8 minutes. They are easy to peel and are then added to the mixing bowl.

  2. Line a muffin tin with 10-12 paper liners.
  3. In a stand mixer(or use a hand mixer and medium bowl) beat the sugar, bananas, oil, egg and vanilla together.
  4. In a small bowl whisk the gluten-free flour, rice bran, baking soda and powder and salt.
  5. Add dry ingredients to wet and mix on low speed until combined.
  6. Add the coconut milk and mix on low speed increasing to medium until you have a smooth batter.
  7. Fold in the chocolate chips.
  8. Use an ice cream scoop to drop batter into lined muffin pan.
  9. Bake in oven for 23-28 minutes.
  10. Remove and cool.

Recently, I found Robin Hood gluten free flour blend at London Drugs and was excited to give it a try.

The price of the bag was quite good ($6.99) and I was hoping it would be a flour blend that I could add to my cupboard.
Right away I whisked up a pancake batter and though the pancakes were not the best ever, I knew I could play with this gluten free flour and come up with good recipes.
In gluten free baking I find you have to be creative with the moisture added to recipes because sometimes gluten free baking can be dry. What could be better than bananas, buttermilk and zucchini added to the dry ingredients?
Oh, ya chocolate.
Now chocolate will not add a lot of moisture but it sure tastes great, right?

You will notice on the recipe that I used a frozen banana. Frozen bananas whip up great and add a creaminess to batters. I freeze the whole bananas as soon as I purchase them. To use, remove from freezer and let unthaw for 5 minutes.

These muffins rose wonderfully and were light and fluffy in texture.

Ingredients
  

  • 1 frozen banana
  • 1 1/4 cup grated zucchini
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp xanthan gum
  • 1 large egg
  • 1/4 cup canola oil
  • pinch of salt
  • 1 cup Robin Hood gluten free flour blend
  • 1/2 cup cocoa powder
  • 1/2 cup buttermilk
  • 1/2 cup optional Enjoy Life mini chocolate chips

Instructions
 

  • Preheat oven to 375 degrees.
  • Line 12 muffin cups with paper muffin liners.
  • In a medium bowl, beat egg and slightly unthawed banana with a hand mixer until smooth.
  • Add sugars and oil and beat again.
  • In a small bowl whisk the gluten free flour, salt, cocoa, baking soda, baking powder and xanthan gum.
  • Add dry ingredients to wet and mix on low speed. You will find batter to be quite thick.
  • Add the buttermilk and beat on low speed until smooth.
  • Stir in grated zucchini.
  • Scoop muffin batter equally amongst the 12 muffin cups.
  • Bake for 20 minutes.

Gluten-Free Banana Muffins (And Weekend in Fairmont, BC)

Last month Kevin and I had the great experience of spending some time in Fairmont, BC. What made it even better is most of our kids were able to stay with us.
We had been kicked out of our house while they were refinishing our hardwood floors, and truth be told, I was beyond excited to have a fully functioning kitchen again.
I couldn’t wait to bake, bake, bake for my crew!
The drive to Fairmont from Calgary is a beautiful drive that includes seeing some of the most beautiful mountains in the world. It is a mere 3 hours from Calgary.
I knew I wanted to bake a lot, but didn’t want to take 5-8 different flours with me. At home, I normally have all the gluten free flours in jars available – but really wanted to bake simpler.
I had had success using Cup4Cup gluten free flour mix available at Williams Sonoma with a few recipes and wanted to see how the mix would work.
Well, it worked great!
I, as well, as everyone who was fed, enjoyed all the baked goods.
Yes, Cup4Cup is expensive, but I found the ease of it for me over the weekend was so worth it. I made banana muffins, oatmeal cookies, pancakes, banana bread and pumpkin coffee cake with the one bag.
I easily substituted the Cup4Cup flour with my old pre-celiac recipes.
The first morning in Fairmont I made a big batch of gluten free banana muffins. The muffins never got a chance to cool off before they were dug into.
They were such a hit, that Cam actually ate 4 – or was that 5 muffins in the end.

Once breakfast was consumed, we headed outside to check out the area. Our townhouse was located right beside a creek and a path up the hill to the hot springs.
Lots of climbing and exploring was done. The weather was absolutely beautiful, it was better than fall weather, more like summer.
On our hike we could see a waterfall that begged us to check it out more closely. What we found was a natural hot springs that tempted us to jump in.
I think we all could have stayed in that pool and waterfall all day. Our own little private infinity pool, surrounded by mountains and fresh air.
That afternoon, I baked up a big batch of oatmeal cookies. I found the recipe for thick, chewy oatmeal raisin cookies by smitten kitchen and just switched out the Cup4Cup for the regular flour.

With the Cup4Cup I also made a large banana bread.

And pancakes for the crew one morning and a pumpkin coffee cake and pan of brownies to take home.

All in all, my baking weekend was a great success and I would recommend Cup4Cup if you are looking for a great all purpose gluten free flour blend.
Our time in Fairmont was fantastic and we enjoyed ourselves tremendously. Kevin and I were so thrilled to have some of our staying with us. I think we all relaxed, laughed, swam, hiked, ventured, ate, drank and just plain had a great holiday.



On my way through Radium, BC I stopped at the Melting Pot for some breakfast and was pleasantly surprised that they offered gluten free toast with my meal.

Here is the recipe for Banana Muffins that I made one morning.

Gluten-Free Banana Muffins (And Weekend in Fairmont, BC)

Ingredients
  

  • 4 cup gluten free flour blend
  • 1 cup organic cane sugar
  • 11/2 tbsp gluten free baking powder
  • 1 tsp baking soda
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup mashed bananas
  • 1/3 cup melted coconut oil
  • 1 tbsp vanilla
  • 1/2 -3/4 cup gluten free dark chocolate chips I use Enjoy Life brand

Instructions
 

  • In a medium bowl, whisk all dry ingredients together.
  • In another medium bowl, beat eggs with a hand mixer.
  • Add buttermilk, bananas, oil and vanilla and beat until blended.
  • Add dry ingredients to wet and stir until combined.
  • Fold in chocolate chips.
  • Line muffin pan with paper liners.
  • Fill cups 3/4 full.
  • Bake in a 375 degree oven for 20-25 minutes.

With the holidays over, you probably have family and friends still popping by and the kids are still off of school. So you may be looking for a great brunch recipe!
This is a delicious gluten free breakfast that will surely be your new family favorite. Gluten Free Waffles topped with warm salted caramel sauce, bananas and toasted almonds.
Oh ya!
The key to these waffles is using buttermilk. I find the buttermilk gives pancakes and waffles the “lift/air” that gluten free goods tend to not have.
 

Gluten Free Waffles

Ingredients
  

  • 3/4 cup potato starch
  • 1/2 cup brown rice flour
  • 1/4 cup tapioca starch
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/3 tsp xanthan gum
  • 3 xanthan gum
  • 2 tbsp vegetable oil
  • 1 cup buttermilk

Instructions
 

  • Heat up your waffle maker.
  • In a medium bowl add dry ingredients (potato starch, brown rice flour, tapioca starch, baking powder, baking soda, salt and xanthan gum) and combine well.
  • Add wet ingredients to dry and stir well to make a smooth batter.
  • If too thick add a little more buttermilk.
  • Pour small amount of waffle batter to hot waffle maker.

Salted Caramel, Banana and toasted almond topping

Ingredients
  

  • Salted Caramel Sauce (see www.lickmyspoon.com) for a great recipe
  • 2 bananas
  • 1 cup sliced almonds
  • 1/2 cup butter
  • 2-3 tbsp heavy cream

Instructions
 

  • Add 1/4 cup butter and 1 cup almonds to a pan and heat until lightly toasted.
  • Put toasted almonds into a bowl.
  • With same pan,  add 1/4 cup butter and 2 bananas sliced and heat on low for a couple of minutes.
  • Add 1/2 cup of the salted caramel sauce and whipping cream to bananas and simmer until caramel sauce is warm.
  • Top waffle with salted caramel banana sauce, and then top with toasted almonds.
  • This made 4 waffles.

I have hit a change in my household this fall that has left me changing my ways. What is it you ask?
I am experiencing an empty house.
I’ve been used to the last couple of years cooking daily meals for my son and my hubby. This fall, that has changed for my son is spending long, long days at the university and comes home late in the evening and my hubby has been travelling every second week with his job. That leaves just me in the house for meals.
What is the problem with that is, I still grocery shop as if I am cooking for a crowd, so that leaves me with veggies going bad, cartons of milk about to expire and larger cuts of meat in the freezer not being used.
That is what happened to me on Tuesday when I discovered a carton of milk about to expire and what was I going to do with it. Solution?
I made pudding!
I actually made 3 different puddings until all the milk was used up.
Banana pudding.
Butterscotch pudding with salted caramel sauce on top.
Pumpkin pudding.

I love pudding and it is definitely a comfort food for me. In fact, I love to eat pudding when it is still hot, and then pouring some thick cold whipping cream over top.
That is pure YUM for me!

Banana Pudding

Ingredients
  

  • 1 cup sugar
  • 4 egg yolks, beaten
  • Dash of salt
  • 1/4 cup cornstarch
  • 1 tsp good vanilla
  • 1/2 tsp Watkins banana extract
  • 3 cups milk
  • 2-3 bananas
  • Gluten free graham cracker crumbs

Instructions
 

  • Mix sugar and cornstarch into a saucepan.
  • Add milk and salt, stirring really well and cook over low-medium heat until thickened.
  • Add small amount (couple of Tbsp’s) of hot mixture to beaten eggs and stir well.
  • Add another couple of Tbsp’s of hot mixture to eggs again and stir.
  • You should now be able to add egg mixture slowly back to saucepan and continue stirring until pudding is thickened, about 3 minutes.
  • Add vanilla and banana flavorings to pudding, stirring to combine.
  • Remove from heat and pour into a bowl.
  • Cover bowl with saran wrap to prevent skin from forming on pudding.
  • Banana pudding parfaits.
  • Add a couple of Tbsp’s of gluten free graham crumbs to bottom of bowl.
  • Slice up a banana and put a handle of slices on top of graham crumbs.
  • Now layer with banana pudding and then whipped whipping cream.
  • Top whipped cream with a few more slices of bananas.
  • Enjoy!

Butterscotch Pudding

Ingredients
  

  • 4 tbsp butter
  • 1 cup dark brown sugar
  • Dash of salt
  • 3 tbsp cornstarch
  • 2 1/2 cups milk
  • 2 eggs
  • 1 tsp vanilla

Instructions
 

  • In a saucepan, melt butter.
  • Add the brown sugar and salt and stir until sugar is mixed in.
  • Remove from heat.
  • In a small bowl, combine cornstarch with 1/4 cup milk.
  • Stir until smooth, no lumps.
  • Whisk in eggs to milk mixture.
  • Gradually pour the remaining milk into the brown sugar, whisking until smooth and then add cornstarch mixture as well.
  • Return the saucepan to a medium heat, whisking until pudding comes to a boil.
  • Turn heat to low, and continue cooking for about another minute.
  • Remove from heat and add vanilla.
  • Pour into a bowl and cover with saran wrap to prevent skin from forming on pudding.
  • Butterscotch Pudding parfaits.
  • Add a couple Tbsp’s of gluten free graham crumbs to bottom of bowl.
  • Add butterscotch pudding and then top with whipped whipping cream.
  • Add a good spoonful of salted caramel sauce over top.
  • Enjoy!

The 3rd pudding I made was a pumpkin pudding. I found the recipe for pumpkin pudding on the blog Sugarcrafter.
I also had some cooked sugar pumpkin puree left over from Thanksgiving and thought this was a great way to use it up. I enjoyed this pudding a lot and will make it for a holiday again as a nice lighter alternative to a pumpkin pie.

Pumpkin Pudding

Ingredients
  

  • 2 tbsp cornstarch
  • 1/4 cup brown sugar
  • 2 tbsp brown sugar
  • 1 3/4 cup milk
  • 1 egg
  • 1/2 cup pumpkin puree
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves

Instructions
 

  • In a small bowl, whisk together the milk and egg.
  • In another bowl, combine the pumpkin and spices.
  • In a saucepan over medium heat, combine the cornstarch and sugar.
  •  Gradually whisk in the milk mixture, scraping the bottom and sides with a rubber spatula to break up the lumps.
  • Bring to a boil and cook until mixture thickens.
  • Stirring constantly.
  • Remove from heat.
  • Add the pumpkin mixture to the pudding and stir to combine.
  • Place the saucepan over low heat until heated all through.
  • Transfer to a bowl, and cover with saran wrap to prevent skin forming on pudding.
  • Enjoy!
