Gluten Free Dried Fruit Loaf
This gluten-free dried fruit loaf is easy to make, super moist and packed with a variety of dried fruits. Perfect in the afternoon with a cup of coffee or tea.

- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 Cup unsweetened applesauce
- 1/3 Cup oil
- 1 1/2 cups gluten free flour blend
- 1 Tbsp gluten free baking powder
- 1 Tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cardamon
- 1 cup Buttermilk
- 1 1/2 cups Variety of dried fruits, finely chopped (apricots, dates, cherries, blueberries, currants, raisins
Preheat oven to 350 degrees.
Line a loaf pan with parchment paper.
In a medium bowl cream the butter and brown sugar with hand mixer.
Add the eggs, oil and applesauce and beat on low speed until well combined.
In a small bowl whisk the gluten free flour blend, baking soda, baking powder and spices.
Add the dry ingredients, alternately with the buttermilk and mix on low speed.
Increase speed to medium and beat until batter is smooth.
Fold in the dried fruits and stir well.
Pour the batter into the loaf pan and bake for 45-50 minutes.
Remove from oven and let cool.
