A classic and traditional gluten-free gingerbread cake recipe that is easy to make.

Ingredients
  

Caramel Icing

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/4 cup milk
  • 2- 21/2 cups icing sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9×9 baking pan with parchment paper.
  • Add the softened butter and sugar to a medium bowl and mix on low speed. Increase speed to medium and beat.
  • Add the molasses, applesauce and egg and mix on medium speed. Beat until smooth
  • Add the dry ingredients and and mix on low speed.
  • Add the buttermilk and beat on low speed. Increase speed to medium and beat until batter is light and fluffy.
  • Pour batter into baking pan.
  • Bake for 33-35 minutes.
  • Remove and cool.

Caramel Icing

  • Melt butter and brown sugar on low heat
  • Increase heat and bring to a boil and boil for 2 minutes, stirring constantly.
  • Add milk and heat until just boiling.
  • Remove from heat and cool for a couple minutes.
  • Add the icing sugar and use a hand mixer to beat until smooth.
  • Spread icing right away on cooled cake
