This quick and easy to make gluten-free brown sugar pecan loaf is moist, full of flavour and chopped pecans.

  • Preheat oven to 350 degrees.
  • Line the bottom and sides of a loaf pan with parchment paper.
  • In a mixing bowl add the butter and brown sugar and beat until light and fluffy.
  • Add eggs, one at a time, beating well after each egg is added.
  • In a small bowl whisk the gluten-free flour, cloves, cinnamon and baking powder.
  • Add dry ingredients alternating with the milk, water and vanilla.
  • Beat on medium speed for a couple of minutes until mixture is smooth.
  • Fold in the pecans.
  • Pour the batter into the loaf pan and top with the ground pecans.
  • Bake for 60-65 minutes.
  • Remove loaf and cool completely before slicing.
