Gluten-Free Quinoa Dried Fruit Salad
This gluten-free quinoa dried fruit salad is easy to make and perfect as a side dish with chicken or fish or as a full vegetarian meal.

- 1 cup Rainbow Quinoa
- 2 Tbsp olive oil
- 1 Tbsp honey
- 1/4 tsp cumin seeds
- 1 juice from lemon
- 1 juice from lime
- 1/2 cup dried apricots, chopped
- 1/2 cup dried cranberries
- 2 green onions, chopped
- 1/2 Cup red pepper, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 Cup fresh dill, chopped
- 10 cherry tomatoes, cut in 1/2
- 1/4 Cup toasted pine nuts
- 1/4 cup optional raisins
Cook quinoa according to package directions.
Allow to cool.
In a small bowl, whisk the olive oil, juice from lemon and lime, cumin seeds and honey.
In a medium bowl add all the ingredients and stir well.
Pour the dressing over and stir again.
Salad can be kept in refrigerator until ready to use.
This recipe will serve 2 if using it as a main dish or 4 if using as a side dish.
