This gluten-free quinoa dried fruit salad is easy to make and perfect as a side dish with chicken or fish or as a full vegetarian meal.

Ingredients
  

  • 1 cup Rainbow Quinoa
  • 2 Tbsp olive oil
  • 1 Tbsp honey
  • 1/4 tsp cumin seeds
  • 1 juice from lemon
  • 1 juice from lime
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 2 green onions, chopped
  • 1/2 Cup red pepper, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 Cup fresh dill, chopped
  • 10 cherry tomatoes, cut in 1/2
  • 1/4 Cup toasted pine nuts
  • 1/4 cup optional raisins

Instructions
 

  • Cook quinoa according to package directions.
  • Allow to cool.
  • In a small bowl, whisk the olive oil, juice from lemon and lime, cumin seeds and honey.
  • In a medium bowl add all the ingredients and stir well.
  • Pour the dressing over and stir again.
  • Salad can be kept in refrigerator until ready to use.
  • This recipe will serve 2 if using it as a main dish or 4 if using as a side dish.
