These easy to make gluten-free dark chocolate chunk quinoa muffins are perfect for breakfast or anytime you need a chocolate snack. Gluten-free chocolate muffins that are soft and moist and taste delicious.

  • Preheat oven to 350 degrees.
  • Line a muffin pan with 9 paper liners.
  • In a medium bowl add the eggs and oil and beat well.
  • Add the applesauce and with a hand mixer beat on low speed.
  • Add the quinoa flour and mix on low speed.
  • Add the rolled oats, cocoa powder, brown sugar, baking powder and soda, xanthan gum and mix on low speed.
  • Add the buttermilk and mix on low/medium speed until batter is smooth.
  • Fold in chocolate chunks.
  • Use an ice cream scoop to drop batter into lined muffin pan and bake for minutes.
  • Remove from oven and allow to cool.
