Gluten-Free Snickerdoodle Protein Balls

A delicious, no-bake, slightly sweet, gluten-free, protein packed treat that tastes just like a snickerdoodle cookie. Dip in white candy melts and you have a festive, fun and healthyish gluten-free treat for the holidays.

Ingredients
  

  • 3/4 cup Cashew butter
  • 1/2 Cup Vanilla protein powder
  • 1 1/2 cups almond flour
  • 1/2 Tbsp cinnamon
  • 1/2 cup Liquid honey
  • 1/4 Cup coconut oil (not melted)
  • Coconut sugar

Instructions
 

  • In the bowl of a food processor add all the ingredients except the coconut sugar. Process until combined. Mixture should stick together.
  • Use a small ice cream scoop to drop dough onto a small cookie sheet. Use your hands to form each one into a ball.
  • Refrigerate for 20-30 minutes.
  • Roll each ball in coconut sugar and cinnamon or melt white candy melts in the microwave and dip each protein ball in it. Sprinkle each ball with Christmas sprinkles.
  • Refrigerate for 30 minutes.
  • Store in the refrigerator in a ziplock bag or container.
