Gluten-Free Snickerdoodle Protein Balls
A delicious, no-bake, slightly sweet, gluten-free, protein packed treat that tastes just like a snickerdoodle cookie. Dip in white candy melts and you have a festive, fun and healthyish gluten-free treat for the holidays.

- 3/4 cup Cashew butter
- 1/2 Cup Vanilla protein powder
- 1 1/2 cups almond flour
- 1/2 Tbsp cinnamon
- 1/2 cup Liquid honey
- 1/4 Cup coconut oil (not melted)
- Coconut sugar
In the bowl of a food processor add all the ingredients except the coconut sugar. Process until combined. Mixture should stick together.
Use a small ice cream scoop to drop dough onto a small cookie sheet. Use your hands to form each one into a ball.
Refrigerate for 20-30 minutes.
Roll each ball in coconut sugar and cinnamon or melt white candy melts in the microwave and dip each protein ball in it. Sprinkle each ball with Christmas sprinkles.
Refrigerate for 30 minutes.
Store in the refrigerator in a ziplock bag or container.
