These gluten-free pumpkin quesadillas bring a delightly twist to a classic quesadilla. Use a knife to carve fun pumpkin faces out of the gluten-free tortillas before sandwiching them with shredded cheese.

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.
  • Use a sharp knife to cut out pumpkin faces into 3 tortillas.
  • Arrange 2-3 gluten-free tortillas on cookie sheet.
  • Add shredded cheese to each one.
  • Top with tortilla pumpkin faces.
  • Bake in oven for 6 minutes.
  • Remove and serve.

Optional: add a dollop of pizza sauce to tortillas before you add the shredded cheese.
