Quinoa Salad

A healthy gluten-free quinoa salad that is made with simple fresh ingredients and a bunch of herbs. This healthy cold quinoa salad is perfect for meal prep. One of the quickest and easy lunch recipes.

Ingredients
  

  • 1 cup quinoa
  • 1- 1 1/2 juice of lemons
  • 1/3 cup avocado or olive oil
  • 1/2 cup cucumber, chopped
  • 1 red pepper, chopped
  • 1 Small pkg grape tomatoes
  • 1 cup feta cheese, chopped
  • 1/3 cup Each fresh herbs….mint, cilantro, parsley, dill

Instructions
 

  • In a cooking pot, add 1 cup quinoa and 1 ½ cups water.
  • Bring to a boil, cover with a lid, turn down heat to simmer.
  • Cook for 15-20 minutes.
  • Remove Quinoa from heat, fluff with a fork and let cool.
  • Pour quinoa into a medium bowl.
  • Chop the cucumbers and red pepper into bite sized pieces.
  • Cut the tomatoes in half.
  • Add cucumbers, peppers, tomatoes, olive oil, lemon juice to the quinoa.
  • Chop up all the herbs and add to the bowl and toss.
