Gluten Free Snickerdoodles

Ingredients
  

  • 1 cup softened butter
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • 2 1/2 cups gluten free flour blend (1 to 1)
  • Cinnamon and sugar mixed together on a plate

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a stand mixer add the butter and sugar and mix on low speed.
  • Increase speed until creamy.
  • Add eggs and beat well.
  • Scraping sides of bowl to incorporate all.
  • Add vanilla, baking soda and cream of tartar and mix on low.
  • Add flour and mix on low until all combined.
  • Use an ice cream scoop to scoop out cookie balls.
  • Roll each one in cinnamon sugar mixture and place on cookie sheet.
  • Use a fork to lightly press down each cookie.
  • Bake for 11 minutes.
  • Remove and cool.
  • Enjoy
