Preheat oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
In a stand mixer add the butter and sugar and mix on low speed.
Increase speed until creamy.
Add eggs and beat well.
Scraping sides of bowl to incorporate all.
Add vanilla, baking soda and cream of tartar and mix on low.
Add flour and mix on low until all combined.
Use an ice cream scoop to scoop out cookie balls.
Roll each one in cinnamon sugar mixture and place on cookie sheet.
Use a fork to lightly press down each cookie.
Bake for 11 minutes.
Remove and cool.
