Gluten-Free Sugar-Free Mini Peppermint Patties

Gluten-free mini peppermint patties are an easy to make, no-bake, healthier sugar-free and treat for the holidays. A creamy, minty filling and a rich chocolate coating that will remind you of york peppermint patties-just without all the sugar.

  • In a small bowl add butter and cream cheese and use a hand mixer to beat well.
  • Add icing sugar and peppermint extract and beat well until smooth.
  • Melt chocolate with coconut oil in a saucepan on low heat.
  • Add about a tsp of melted chocolate to each of the 24 mini muffin cups.
  • Use the spoon to spread chocolate up a bit of the sides of cups.
  • Place in freezer for 10 minutes.
  • Scoop about a tsp of peppermint mixture into each cup. ( I use a small ice ice cream scoop and do 1/2 scoops.
  • Lightly press so it’s smooth.
  • Top with melted chocolate just until peppermint is covered.
  • Place back in freezer for 15 minutes.
  • Store in fridge.
