Gluten Free Cinnamon Swirl Loaf

An easy to make gluten-free cinnamon swirl cake that is perfect for breakfast, an afternoon snack or dessert.

Cinnamon Sugar mixture

  • Preheat oven to 350 degrees.
  • Line a loaf pan with parchment paper.
  • In a stand mixer beat the butter and the brown sugar.
  • Add the oil and beat until smooth. Using spatula to scrape sides of bowl and incorporate all.
  • In a small bowl whisk the gluten free flour, baking powder, baking soda and spices.
  • Add the eggs and mix on low speed. Scraping sides of bowl to incorporate all. Increase speed to medium and beat well.
  • Add the dry ingredients and mix on low.
  • Add the buttermilk and mix on low speed. Increase speed to medium and beat until you have a smooth batter.
  • Pour 1/2 of the batter into the loaf pan.
  • Sprinkle with the cinnamon sugar topping over batter.
  • Add the rest of the batter, smooth out top and bake in the oven for about an hour.
  • Remove and cool.
