  • In a medium bowl add the eggs, sweetener and oil an beat with a hand mixer.
  • Add the baking powder, nutmeg and gluten-free flour and mix on low speed.
  • Add apple cider vinegar to the oat milk.
  • Pour the oat milk into the batter and mix on medium speed until you have a smooth batter.
  • Ladle about 1/3 cup of batter onto a greased hot waffle maker.
  • Cook waffles until lightly brown and crispy.
  • Remove and repeat until all batter is used up.
