These easy to make gluten-free lemon poppyseed donuts are made with simple ingredients and are packed with lemon flavour. You can leave the donuts plain or top them with a bright yellow lemon glaze like I did.
1cupbuttermilk or milk alternative with 1 tsp apple cider vinegar added
2large eggs
1/4cuplight olive oil
1lemon, juice and zest
1/4cuppoppyseeds
Instructions
Preheat oven to 400 degrees.
Grease 2 donut pans.
In a stand mixer add the eggs, buttermilk, oil, lemon juice and zest and beat on low speed.
Add the gluten-free flour, sweetener, poppyseeds and baking powder and mix on low speed. Increase speed to medium and mix until you have a smooth batter.
Fill a piping bag 3/4 full with batter and twist.
Cut about 1/2 inch on bottom of bag.
Squeeze batter and fill donut cavities about 3/4 the way.
Bake in oven for 11-13 minutes.
Remove and cool for 5 minutes. Gently tap donuts and flip them onto a cooling rack.
